Sometimes we’ll have banana splits for dessert or sometimes for a treat on a warm day.  The top picture shows our son’s banana split.  He likes it loaded with everything, even sprinkles.  The bottom picture shows my husband’s which has very little ice cream and mostly fruit.  I fix mine halfway in between the two with more ice cream but just a little whipped cream (lite).  A lot of times we’ll have both vanilla and chocolate ice cream, but this time we were out of the chocolate.  Adding chocolate syrup makes up for not having the chocolate ice cream.

Notice all the fresh fruit. That makes this dessert a lot healthier than having cake and ice cream! Use low-fat ice cream and skip the whipped cream to make a great tasting low-fat dessert.

video-card-4-8-09When my husband, son, and s-i-l get to talking about computers and all the accessories that go with them, my daughter and I would rather talk about something else like babies, recipes, or shopping.  I have heard the guys talk about video cards, and I know those are important to a computer.  I just trust them to take care of the computers and make sure they have everything on them that is needed.

wilmington-nc-4-8-09Do you have your idea of a dream house?   I guess mine would be to have a large dining area with an extra-long dining table so we could have lots of people sitting at the same table for dinner, a larger kitchen, and a separate office area.  This is just thinking off the top of my head.  I’m sure there is more I could think of.

Now where would be a good place to live?  Would you be interested in Wilmington NC real estate That would be coastal property.  Or would you be interested in living in the mountains?   Wherever one’s house is located, though, it’s family that makes a house a home.  That’s a true dream home!

This is an easy, low-fat recipe which would be great for a meal or as an appetizer:

INGREDIENTS:

  • 4 chicken breasts, boneless, skinless
  • 24 asparagus spears with the tough ends removed
  • 2 tablespoons lemon juice
  • 6 green onions, chopped
  • (toothpicks)

Spray baking dish with non-stick cooking spray.  Cut chicken into strips that are about one inch by five inches, which should make 12 strips total.  Wrap each strip with 2 asparagus spears and fasten with toothpicks.  Place chicken strips in baking dish.  Sprinkle with lemon juice and green onions.  Cover and bake at 350 degrees for 30 minutes.  Remove the toothpicks and serve.

Are you in the mood to redecorate but don’t have the money to do it?  I was a while back.  By adding in a touch of color, the look of a room can be changed. In my case, it was adding “red” to our decor. Here’s how I did it:

  • I decided on the color I wanted to add which was red.
  • I shopped around for bargains and found several.
  • At Cracker Barrel, I found a $20 red silk flower arrangement on clearance for $5.
  • At Pottery Barn, I found red pillow covers half price and bought two.  (We had two really nice decorative pillows that came with our sofa, but I was so tired of their floral print.  We still have the nice pillows…only now they’re red.)
  • Also at Pottery Barn, I found a red cranberry wreath half price and bought ribbon at a craft store to make a bow for it.
  • At a Kirkland’s store in the mall, we found two small framed pictures with red flowers that were just perfect.  And they were on clearance, too, for a great price.

Other stores that would be great to check out would be Target’s clearance section, Ross Stores, T. J. Maxx, Tuesday Morning, clearance items at Dillard’s or any major department store, and possibly Burlington Coat Factory’s home section.

A lot of people have hobbies of various sorts.   For some, it might be cooking or baking, sewing or crafting, gardening, a sport such as tennis or jogging, reading, and the list can go on and on.  Some might even like to put together Carrera slot cars from a kit.  There are all kinds of hobby materials available from hobby shops.  Whatever the hobby, it is a good way to relax from the tensions of the day, to reduce stress, and maybe even make other people happy.
