Menu Plan Monday 5/21/12

We had a busy weekend going out-of-town to visit family and attending a wedding in which our son was a groomsman.  He’s supposed to email me photos since I forgot my camera (hint hint, if you’re reading this, my son), and I might post one or two later on.  It was a wonderful weekend.  There’s nothing like being with your kids and grandkids to warm a parent’s heart!

Monday: Chicken, steamed broccoli, corn
Tuesday: Salmon patties, Kale & Romaine Salad, carrots

Wednesday: Leftover salmon patties, carrots, and salad

Thursday:  Herbed Quinoa – high in protein with 13 grams per 1/2 cup (dry) serving (I may just use fresh parsley, which is growing in a pot on our deck.  The other two herbs will probably be dried unless I make it to the store.)

Friday:   Leftover Quinoa and salad
