Menu Plan Monday & Recipe for Abuelo’s Salmon Santa Cruz


We love salmon! Not only is it super healthy and rich in omega-3 fatty acids, it tastes delicious.  Here’s a recipe from Abuelo’s Restaurant I want to share with you for Thursday.  The salmon sounds delicious, and the video for Abuelo’s recipe makes me want to try it.

Monday:  Roast, potatoes, carrots

Tuesday:  Lasagna, green beans, salad

Wednesday: Marinated Chicken Breasts from Food Network grilled on stove top, yellow squash & onions  (didn’t have this last week)

Thursday: Salmon Santa Cruz, Cilantro/Lime Rice, steamed veggies

Friday: Freschetta’s Simply Inspired “Farmers Market Veggie” Pizza (We LOVE this pizza!), salad

Scrubs

Teacher’s aides at the school where I teach used to be able to wear nursing scrubs to school.  Some of them might have to change diapers, feed students, etc., and it made sense to wear them.  Scrubs can be found everywhere from online at such places as plus size scrubs for women and even at grocery stores.  I’ve seen them a lot of different places.  The great thing about scrubs is that they are inexpensive, comfortable, and come in a large variety of prints.

Reminder: Friday is “Cow Appreciation Day” at Chick-Fil-A

This Friday will be a fun “Cow Appreciation Day” at Chick-Fil-A!  If you dress “fully like a cow,” you get a free meal for free.  If you wear “partial cow attire” which means “a cow accessory,” you get a free entree such as a sandwich.  I’ve never heard of a cow accessory (lol) but that’s something like a hat with ears, etc.  We have done this several years and have gotten free sandwiches.  It’s fun, too, watching people come in and stand in line in their cow attire.  And what’s really fun is watching the people come in who know nothing about dressing like a cow!

Shopping

It’s almost time to start thinking about back-to-school shopping.  Not only will parents be shopping for school clothes for their school-age children, but teachers will be looking for professional clothing to wear to school as well.  There should be a lot of good sales going on for clothing and shoes, and there might be a jewelry deal of the day to accessorize new outfits.  I imagine there will be a lot of people shopping the sales for whatever their clothing need might be.

Menu Plan Monday 7/9/12


Hello from Texas!  We are surviving the hot weather!   We had a cold front come through and it’s been in the 90’s. (Haha)  Thankful for little blessings!

Have you ever gone to the fridge and thought, “What am I going to fix to eat?  I haven’t been to the store yet!”  I have, but if there are eggs and any fresh veggies at all, then a meal can be made.  Notice Tuesday’s meal which is a perfect example of a meal that can be made with what’s on hand.

Monday:  Grilled catfish fillets (grilled on stove top), salad, fried okra

Tuesday:  Veggie Scrambled Omelet – Saute chopped onions, zucchini (whatever veggies you have on hand) in extra virgin olive oil for about ten minutes until tender.   Pour in scrambled egg mixture and cook until done.  Top with cheese.  Serve with homemade fried potatoes or hash browns and whatever breakfast foods you like.

Gold Jewelry

I’ve been hearing on the radio about this place that will buy gold jewelry, even broken jewelry such as earrings, for the gold content.   If someone had a 10k gold chain that they wore a lot or even just occasionally, they wouldn’t be interested in a place like this.  But for someone who had broken earrings or maybe lost one earring in a pair, they might want to make some extra money by selling jewelry they never wear anymore.  Plus, it would be a good way to clean out their jewelry box.

Information Age

It’s amazing to me how just about everything is available online.   If you do a search, chances are you’ll find what you’re looking for.  There’s everything from at home paternity tests to how to build your own house, etc.  I must admit that it’s convenient to be able to do a search when I’m needing some particular information or directions on how to do something.  It’s easy to see why this is called the “Information Age.”

Losing Weight

Losing weight is going to be a life-long thing with me.  My weight varies five-ten pounds or so throughout the year sometimes.  The problem area for me is going on vacations and holidays, especially Thanksgiving through New Year’s.  That’s when I tend to gain five pounds.   When trying to lose, I try to do it naturally through healthier eating choices and exercise.

There are people trying to lose weight who might order diet pills through http://www.shoppharmacycounter.com/t-Adipex-Medicine.aspx, but that should only be done under the supervision of a trusted doctor.  I prefer to go the natural route and try to lose five or ten pounds over three or four weeks or longer.  Once I get healthy eating habits into my routine again (cutting out desserts for the most part, very little white bread or pasta, etc.), then they stick with me.

Happy Fourth of July!

Hope all of our family and friends have a wonderful 4th of July! How do you like our centerpiece? Thanks to our son’s girlfriend who brought us the candles and flags when they visited us on Saturday to attend Celebrate Freedom at South Fork Ranch (yes, that’s the ranch where the popular TV show “Dallas” was filmed back in the 80’s).

I used a small frog (the kind for flowers) inside a small stemmed glass to hold the flags, and I found one small flag that we already had which I added to the arrangement.  Looks very patriotic!

It’s Hot in Texas…and Everywhere Else Too!

Texas is known for being hot in the summer with temperatures over 100 degrees, but I’m hearing about other places having temps over 100 degrees, too.  One of our relatives lives in an area where it’s just about always cooler than Texas and where it rarely reaches triple digits.  But this summer, it’s been hotter there on a few occasions than it has been here in the Metroplex area.  Crazy weather!

With all of these sunny days, I know a lot of people must be buying tanning supplies.  Not me, however, because I stay inside on really hot days as much as I can.  I remember when the kids were young and taking swimming lessons, though.  We’d be at the pool no matter how hot it was.  And we definitely did take the suntan lotion on those days!

8 Ways to Make it a Healthier 4th of July

The 4th of July is a great occasion for family and friends across the country to get together and celebrate Independence Day. At the same time whether it’s through cookouts, beach gatherings, or simply watching fire works we should always try to make it as healthy an event as possible.

After all, celebrating shouldn’t come at the expense of anyone’s well being.

That being the case if you’re planning on putting together a homemade bash, consider some of the following thoughts for making it a healthier 4th of July:

1. Hydrate: In most of the country Independence Day is usually warm if not down right hot. That means in order to stay hydrated its important to drink a lot of water. A good reminder to keep drinking and making sure others do too is by carrying a reusable water bottle wherever you go. The fact its reusable also makes it environmentally friendly.

2. Soda: Staying hydrated is one thing but sometimes we want other flavors with our meals and the only option is chemical based, sugar laced soda. If it’s bubbles you like purchase a soda water machine with natural flavorings to go with it. You’ll find it meets your cravings, you’ll rarely have to buy another disposable soda bottle again, and the machines usually don’t need electricity so they are completely green.

3. Food: When picking out meat for burgers or poultry for the grill try organic and free range brands. Also, instead of filling up on snacks with little nutritional value make a variety of salads for yourself and the guests. There’s no better time to get creative in the kitchen than now and when it comes to salads the options are unlimited.

4. Recycle: Although plastic doesn’t cause immediate harm to our health when we toss it in the trash it will eventually catch up with us through the environment. Try and recycle as much as possible setting up a recycling station off to the side by the garage door. Otherwise purchase biodegradable brands of tableware.

5. Shade: Being in the sun can be a lot of fun but the truth is we need to shield ourselves from its rays more than we think. Make extra shade by tying tarps or large fabrics between trees and the home to cover sitting and eating areas so there’s enough room for everyone. Those who want to catch some sun still can but having that protection is essential.

6. Repellent: When the sun starts to go down the mosquitoes will come out but instead of using regular bug sprays which contain chemicals such as DEET go with natural options. Some include eco-friendly mosquito coils, essential oils, citronella candles, or green minded store bought repellents.

7. Pesticide: Non-eco-friendly pesticide and herbicides contain poison which kills plant life and other organisms. If these substances were used on lawns or property near a gathering make sure the areas are cordoned off so kids and others planning to roll around in the grass have less of a chance of getting sick. After the 4th of July festivities are over check into more natural ways to solve the pest and weed problems.

8. Fire: Fire is a big part of Independence Day. Aside from general precautions when making a fire for a barbeque don’t toss materials like plastic in the hearth. Unlike wood and paper it transforms into harmful fumes when consumed and are a hazard to breathe. Furthermore, stay clear of any fireworks not only because their explosive nature is dangerous but the fumes they leave are also unhealthy to inhale.

Laptop Computers

Laptops are so convenient!  I don’t know what the very best laptop computers are, however, I do know that I’m thankful to have one where I teach.  I have a teacher’s podium with the regular desktop computer, and then I have an Acer Netbook which comes in very handy.  There are times when the desktop is what I need when I’m using the SMART Board or document camera, and then there are times when the Netbook is exactly what I need.  I’m glad to have both!
