Menu Plan Monday 12-24-12


Merry Christmas everyone!   This week is going to be sooo busy for us and I’m sure for most of you reading this.  We’re playing it by ear and will probably be eating out a lot or bringing in carryout.  So this menu is subject to change.

Also, here are some holiday recipes in case someone needs them:

Have You Ever Wondered…

There are a lot of auto dealers around in different areas of the Metroplex, and I mean a lot.  We’ve also seen dealers for RV’s, but have you ever wondered if there are bus dealers with church buses for sale or other types of buses?  I’ve never seen a dealer for buses, but I’ve seen plenty of church buses and other types of buses being driven in the area, especially school buses.   There must be dealers somewhere or maybe it’s mainly sites online that sell them nowadays.

Dermagist Skin Care Products

Dermagist 12-14-12When asked if I would do a review of my choice of a Dermagist Skin Care product, I decided to choose the Skin Tone Correcting System.  After using the system for about five weeks, I did see a noticeable improvement.  What I noticed first was that I needed less makeup.  I asked my husband if he noticed any difference in my skin,  if it seemed brighter, and if my skin tone was more even.  He said he could definitely tell a difference and my skin looked better and brighter.

I plan to take a picture under bright light and then take another one in a month to see the difference in my skin after using Dermagist for one more month.   My guess is that my skin will look even better.  Look for a follow-up review in the future.

There have been so many goodies at school this past week, two dinners on Sunday, plus more goodies at school this coming week. So I’m planning a lot of salads for our menu. Hope everyone has a good week!

Keep Exercising this Time of Year!

This time of year is so hard for maintaining weight.  We are having Christmas snacks every day this week at the school where I teach plus three days next week.  I can just see the scales now!  One thing I am doing is trying to stop and walk at the mall three times a week on my way home from school to get some exercise.  That’s got to help a little bit.

Some people might get yoga socks and some exercise clothes to wear while working out.  Some might go for a nice, long walk outside or at the mall like I do.   The main thing is to keep moving, stretching, and exercising.

Cute T-shirts

I’ve seen some of the cutest T-shirts recently.  There are places online that sell them such as screen printed shirts in va and other places.  I like the ones that make a statement such as ones for autism, grandchildren or a certain place we like to vacation.  I’ve also seen some cute ones on a couple of kids at school this week.  There are some really creative shirts out there!

Wish Lists

What’s on your Christmas list?   DVD’s, gift cards, dishes, appliances, an otoscope, clothes, perfume, or whatever strikes your fancy?  It helps having a list because then when people really want to know some ideas of what to get for you then your gift list or “Wish List” helps them out.  It really does help, too, because it saves them time on trying to think of something for a gift.   And if it’s something that can be ordered online then that’s even better as far as saving time.  This time of year, who couldn’t use a little more time to get everything done!

Do you feel like there’s so much to do to get ready for Christmas and not enough time to get everything done? That’s how I feel! The weekends pass by so quickly and now it’s time to start another work week.
Last week was so busy, and we didn’t get around to having hardly anything on our menu. So there are some things on our last menu that were carried over to this week.

Mother’s Sweet Potatoes with Marshmallows

My dear, sweet mother used canned sweet potatoes and most people never noticed the difference.  I don’t have her recipe written down (she passed away several years ago), so this is my rendition of her sweet potatoes.  It’s an easy recipe which is great if you don’t have much time or if you don’t want to spend hours in the kitchen prepping and cooking.

INGREDIENTS:

  • 29-ounce can of sweet potatoes, drained
  • 1/4 cup softened butter (I use Spreadable Butter)
  • 3 tablespoons brown sugar
  • 1/4 cup sugar (I substitute KAL Stevia powder for this – 4 tiny level spoonfuls equal 1/4 cup sugar in sweetness)
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Marshmallows

Mash potatoes with a fork until mashed but lumpy.  Mix all ingredients except the marshmallows in a mixing bowl with an electric mixer just until well mixed.  Mixture will be a little lumpy.  Place in casserole dish and top with marshmallows.  Bake at 350 degrees for 20-25 minutes until marshmallows are lightly browned.

 

 

Roll-A-Bout Knee Walkers

If you’ve ever had a loved one who’s had to use a walker or maybe is using one now, you know how invaluable that walker can be. My dear sweet mother had to use one, and we were so thankful she had a good one.

Recently, I read about a roll about walker which is the coolest thing. If someone has hurt one foot or leg and has to stay off of it for a period of time, they can use a roll-about knee walker which means they don’t have to use crutches. That sounds so much better!

I’ve never had to use crutches but I’ve tried to walk with them a few times when friends had to use them. I must admit that I’m not a fan of crutches at all! This roll-about knee walker sounds so much better!

Menu Plan Monday 12/3/12

As I’m writing this on Sunday, I’m still remembering all the blessings we have.  Faith in God and His Son Jesus, family, and friends mean so much.  Just today, I got to reconnect with an old friend, Norma, who was visiting at church.  We were best friends in high school along with Beth.  The three of us were known as “The Three Musketeers” because we were always together.  What special memories!

After church, my husband and I had a lunch date at la Madeleine’s, our favorite place for a restaurant date!  It’s always yummy and has great atmosphere (kinda like being on vacation).   I saved half of my chicken salad and put it on their bread along with blackberry preserves to make a delicious sandwich for lunch tomorrow, so my lunch is already made for work.  Nice!

Recipe for Strawberry “Pink Fluff”


Holiday Strawberry “Pink Fluff” is a family tradition of ours.  It started back when our kids were little and didn’t like the cream cheese in a strawberry layered salad that was my grandmother’s recipe.  My mother left out the cream cheese and just used three ingredients.  It’s been a family tradition to have this at Thanksgiving and Christmas for many years now.  In fact, I had forgotten about it this year, and our college-age son reminded me about having “Pink Fluff” for Thanksgiving.  Here’s the simple recipe:

INGREDIENTS:

  • Strawberry jello (small box for regular amount as pictured)
  • Frozen strawberries, 8 ounces sliced (I use whole, unsweetened.)
  • Cool Whip, 8 ounces

This is such an easy recipe.  Boil one cup water and dissolve jello.  After it’s completely dissolved, add frozen strawberries.  I usually slice them with a sharp knife after they’ve been in the hot jello mixture for a couple of minutes.  After the mixture has gotten cold, stir in half the Cool Whip.  Put mixture in pretty glass bowl and top with the remainder of the Cool Whip.

This recipe can be doubled by using a large box of jello, 16 ounces of frozen strawberries, and 12 ounces of Cool Whip (save 4 ounces for the top).
