Blueberry Muffins Recipe

Since my husband and I both bought blueberries on sale, not knowing that the other one had bought them too, we ended up with a lot of blueberries.   An online search at All Recipes.com came up with this recipe, which I modified here and there.  This recipe was such a hit that I made it one day and then made it again two days later.  We did have a house guest to help us eat them!  They were delicious served warm out of the oven and didn’t last very long at all.

INGREDIENTS:

  • 2 cups flour (I used 1 & 1/2 cups unbleached flour and 1/2 cup spelt)
  • 1/2 cup white sugar plus 4 small scoops of KAL Stevia    (or just 2/3 cup sugar)
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • Blueberry yogurt, 6 ounce carton
  • 1/3 cup oil
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups fresh blueberries

Heat oven to 400 degrees.  Line muffin pans with 15-16 baking cups or grease the bottoms of the muffin pans.  Combine the above ingredients and stir just until the dry ingredients are moistened.  Fill the muffin cups 2/3 full. Sprinkle the tops of the muffins with cinnamon and sugar before baking.

Bake for 20 minutes or until toothpick inserted in the center comes out clean.  Serve warm.

1. What’s your favorite flavor of Italian Ice?

Probably strawberry

2. Watermelon. So you prefer seeded or seedless?

I don’t really care as long as it tastes good and sweet!

3. Ice cream. Do you prefer soft serve or hard?

Depends on what I’m in the mood for.  I like both.
4. Ice pops. What kind is your favorite?

I don’t eat ice pops much anymore.  I think about all the food coloring in them and then they don’t appeal to me.

My Mother-in-Law’s Clematis Vine

This is a picture of my mother-in-law’s backyard taken several years ago.  She had this beautiful clematis vine, but someone trimmed it back too much and it never has been this full again.

I tried to grow a clematis vine here in Texas once, but it didn’t last long.  I think the direct sun and heat was too much for it.  If I ever decide to try growing one again, I think I’ll plant it in a mostly shady area.

Computer Defragmentation

My husband is the one who defragments my computer and the one who helps me with my computer problems. This is what he says:

During the course of normal use, contiguous files become scattered across the disk and are separated from their original locations that were all together in one place. This causes the hard drive to work longer and harder to bring up programs or information. “

Ordering Invitations

halloween-superhero-7-09Some people think way ahead, and some are probably already planning for Halloween.  They may be thinking about ordering Halloween invitations for a party, planning all of the costumes, and making a list of who to invite.  Summer is a good time to plan ahead for an October party before things get busy with all the back-to-school activities, football games, homework to oversee, and the list goes on and on.  The timing is good for starting to plan a party without any rush and last minute hassle.

Check Out Arby’s Coupons, Summer 2009

We’ve saved money this summer 2009 by choosing Arby’s when we want to eat at a fast food restaurant.  We use coupons and also get “Wednesday Freebies” where several Wednesdays a month they offer free items.   This Wednesday, for example, we can get one of their new deli-style “Roastburgers” free by purchasing a drink.  They’ve had this offer before, so we know their Roastburgers are delicious!

If you do eat at Arby’s, be sure to check your receipt.  Often ours will say that if we complete a telephone survey, we will get a free regular sandwich.  The survey is short, and there is no purchase required to get the freebie.  You can’t beat that!

Losing Weight

I wonder when more people try to lose weight?  Is the number fairly well equal throughout all twelve months?  There are probably always a given number of people wanting to lose weight and take the best fat burner they can find during any month of the year, but I would think the number would be higher after the holidays.  But then again, maybe more people are wanting to lose weight during summer’s swimsuit season. It would be interesting to know which season has the highest number.

(However a person chooses to lose weight, they need to check with their doctor first.)

Hmm…it’s hard to think of anything.  I guess the closest thing I can think of is when I was a little girl, my daddy would put salted peanuts in a cup of cold Dr. Pepper.  I thought that was so cool!  Just recently I did that because it reminded me of my daddy (who passed away 15 years ago).

Fancy “S’mores”

Need a quick & easy dessert?  Here’s a new twist on an age-old recipe for S’mores.

I remember making S’mores in Girl Scouts when I was growing up, and Girl Scouts are actually credited with the first written S’mores recipe in their 1927 Girl Scout Handbook.  (I wasn’t born for decades later, just in case you’re wondering.)

Here’s the simple recipe:

INGREDIENTS:

  • Graham Crackers, broken in half to make squares
  • Marshmallows
  • Hershey’s Chocolate Bars
  • Maraschino Cherries
  • Canned Whipped Cream

Place squares of chocolate bar on a graham cracker half.  Then place marshmallows and top with another graham cracker.  Cook in microwave just until the marshmallow puffs up big.   Drizzle melted chocolate on top.  Serve on a pretty plate with chocolate covered marshmallows*, whipped cream and a cherry.

*To make chocolate covered marshmallows, place marshmallow on a toothpick and dip in melted chocolate.  Place on waxed paper to cool.
