Menu Plan Monday 11/26/12

Thanksgiving came and went so fast!  We had a wonderful week being with family, a week filled with many blessings!

The next four weeks will be busy ones with all the Christmas festivities, shopping, baking, and decorating.  Let’s try to remember those who are sad this time of year, missing loved ones who have passed away, and those people who are alone.  This time of year is hard for many of them.

Let the Shopping Begin!

Black Friday is here and hundreds of people are out shopping for gifts, whether it be Koolaburra boots, coats, jeans, games, toys, toasters, gifts for those who have everything, etc.  We usually go shopping in the wee hours of the morning on Black Friday, but we didn’t this year and plan to go out in the wee hours of the afternoon.   Online shopping is very appealing to us and is how we plan to do the majority of our shopping this year.  How do you like to shop?

Recipe for Egg & Cheese “Enchilada”

This can be topped with salsa, but I didn’t want any on mine.  The egg could be placed on a tortilla and then rolled up, however, I didn’t want the extra carbs (especially since I had a couple of little 3 Musketeers Mint with Dark Chocolate bites this morning).

INGREDIENTS:
* Eggs
* Cheese
* Olive Oil
* Salt & Pepper
* Salsa (optional)

Put 1 teaspoon olive oil in non-stick 10-inch pan.  Break open two eggs into pan and stir with spatula to mix egg whites and yokes.  Spread over pan and let cook until it sets.  Slide out of pan onto plate and fill center with cheese just like you would do for an enchilada.  Roll up and top with your favorite salsa, if you like.

Free Printable Holiday Gifts Shopping Planner

If you’re like our daughter and me, we are big list makers.  Lists are wonderful to help us stay organized!  Well, a few minutes ago, I was online and happened to come across this free printable Holiday Shopping Planner which is designed specifically for Black Friday but could used all month long.

The planner has a place to list people, gift ideas, location where the gift is being sold, the  price, and (this is  great) the time the store opens.  It also has a place for Cyber Monday.

This free list is from Sonic which is also advertising 1/2 price breakfast burritos all day on Black Friday.  I wouldn’t be surprised if we stop by and take advantage of this!

Shopping for the Musician in Your Family

Do you have a musician in your family? We have two in ours. Now’s the time to be looking for gift ideas with all the sales going on this week. Maybe you’re looking at guitars or affordable guitar amps, or maybe you’re looking for smaller items such as accessories or music books.  Whatever it is, this is a great time to be shopping for good deals.

What’s your menu for Thanksgiving Day?  Ours is one that does not require hours and hours in the kitchen.  I want to have time to visit with relatives and do some fun things.  So fixing a boneless turkey breast in our slow cooker is perfect.  I’ve shared this recipe before, but here it is again for those who are interested.  This recipe has been my most viewed post the past couple of months.  If you need a delicious, easy recipe, this one is great!

Whiteboards

Being a teacher, I use multiple whiteboards every day at school.  I don’t know what we would do without them now.  Years ago, we used chalkboards and had to deal with messy chalk dust at school.  Back then, we had no idea about a whiteboard, whiteboard mount, whiteboard marker, or whiteboard eraser.  I wonder how many people’s allergies were affected by all that chalk dust?  I’m so glad we have whiteboards today!

5 Minute Berry Sprite Cobbler Cake

With the holidays coming up, sometimes we get so busy and there’s not much time to spend in the kitchen making a “homemade dessert.”  Here’s another easy and fun recipe from my dear friend, Wanda.  This would be fun to make with kids!

INGREDIENTS:

  • 1 frozen bag of berries, your choice
  • 1 white or yellow cake mix
  • 1 can Sprite

Put one bag of frozen berries in the bottom of  your cake pan. Pour a white or yellow cake mix over the berries.  Then take a can of Sprite and pour over it.  Bake at 350 degrees for 30-45 minutes.  Put powdered sugar over it (or be creative and try something else).  It’s kinda like a cobbler.

5 Minute Pumpkin Cake Recipe

Here’s a super easy cake recipe from my dear friend, Wanda, that you can mix together in five minutes.  Great for the hectic holiday season!

INGREDIENTS:

  • Yellow or spice cake mix  (Mary says spice is really good)
  • 1 can pumpkin (not pie mix)
  • 1 egg (another recipe says it’s optional)

Combine ingredients and bake for 30 minutes at 350 degrees.  Sprinkle with powdered sugar or top with your favorite cream cheese frosting.  It’s that easy!
