Remodeling

Someday, I want to remodel our hall bathroom.  We replaced the flooring several years ago and it still looks great.  I really like the large mirrors in our bathrooms, however, I like an idea that our daughter, Christi from Frugal Novice, has for the hall bathroom mirror which is to put molding all around the it.  They did that in one of their bathrooms, and it looks great!   I also want to replace the lighting above the mirror with something similar to the lightning in this picture, so I might look at Kichler lighting and other places to see where we could get the best price.  And I’d like to paint the cabinets and take down the wallpaper.  Hmmm….that’s a lot, expecially taking down the wallpaper which is on every wall.  That would require refinishing or priming the walls so we could paint them.  Whenever we do remodel, I think we’ll do it a little at a time!

Laptops

One of my dreams is to someday get a laptop.  Now don’t get me wrong, I’m very thankful to have my own computer which works fairly well for being an older computer.  I don’t have to use my husband’s or borrow our son’s when he’s at home.  But still, I would really like to have a laptop!   When the time comes that I’m ready to look for one, I’ll probably check into wholesale laptops and other places where I could get a good deal.  But I can’t foresee that being anytime soon.

Digital Camcorders

I remember when we bought our first camcorder ages ago when our son was a baby.  It was a big, bulky thing which was very tiring to hold up for an extended period of time.  Then we eventually got a “smaller” one which would still be big by today’s standards.  Several years ago, we finally bought one that is small and easy to hold.  If you look at current digital camcorder reviews, however, they have even smaller camcorders that don’t require tapes.  We’re not that up-to-date technologically speaking, but I’m satisfied with what we have!

Menu Plan Monday & Fresh Corn Salad Recipe for 8-30-10

Well, now that our son has gone back to college, I’ll just be cooking for two.  My menus will probably be repetitive and will be back to incorporating rotisserie chickens into our menu every week, especially after a day of substitute teaching!

This week, I want to share a great new squash recipe that our son discovered at Central Market.  It’s so good!

MONDAY:  Salmon Patties, Sauteed Yellow Squash in Herb Butter (new family favorite!), frozen baby lima beans

TUESDAY:  Left-over salmon patties, frozen corn, green beans

WEDNESDAY: Italian Chicken Pasta, salad

THURSDAY:  Chicken Tortilla Soup

FRIDAY:  Reduced-Fat Homemade Pizza

I think this song is so beautiful!  I actually got tears in my eyes when I first watched this.  Maybe part of the reason that it touched me so much is that my husband and I work with a ministry at church that helps those trying to overcome drug and alcohol addiction.  Some have been in jail or prison, some homeless at one time, some had good jobs but lost them due to their addiction.  The church offers a 12-step Bible based recovery class for them, and it is so beautiful to see those who feel they have no hope left in life turn their lives around and find hope in Jesus.  So this song reminds me of them and also of myself and everyone who needs Jesus!

Online Schools

Now is the time of year when a lot of people are thinking, “Back to school!” for their kids.  Stores are busier than usual with back to school shopping for supplies and school clothes.  It’s also a time when adults are thinking about maybe going back to school, too.  Fitting in time for classes, though, is hard with jobs and busy lives.  Because of that, Online School is becoming more and more popular with people nowadays because it’s easy to fit school around your schedule. Our son took one online course while he was home for the summer, and it was great to be able to fit in an “online class” and studying into his busy work schedule.

My Office Area Needs Help!

I need to do something with my tiny office area!  It’s in the living area where I’m conveniently located to the kitchen, not far from the washer and dryer when I’m doing laundry, or if family’s here then I’m in the middle of what’s going on and not isolated off in an office somewhere.  So the location is great!  And I’m connected wirelessly somehow to my husband’s printer in another room where his desk is located, so he keeps up with all the printing stuff and knows about 108r00727 black ink, color ink, etc.  So the printer part is fine!  And I have my monitor on a nice stand, however, I have to put my keyboard on a TV tray and have trouble with my mouse falling off the TV tray.  What I really, really need is a new desk!

Tasty Tuesdays: Sauteed Yellow Squash in Herb Butter

This is a new “family recipe” that our son actually discovered.  While in Central Market with some friends, they sampled this dish and thought it was delicious.  So…he brought home the recipe card and you can imagine, as most moms would do, I bought some squash and made the recipe.  We all loved it, and I’ve made it a couple of times.  I even made it when we went to visit my mother-in-law.  It is definitely on our family favorites list!

INGREDIENTS:

  • 1 pound yellow squash, cut into bite sized pieces
  • 1/4 – 1/2 cup chopped onion  (I added this because I always cook squash with onion)
  • 1 1/2 tablespoon Extra Virgin Olive oil
  • 1 1/2 tablespoon butter
  • Fresh lemon juice  (1/4 – 1/2 small lemon)
  • 1/2 teaspoon thyme
  • Salt & Pepper

DIRECTIONS:

Sauté the squash and onion in olive oil and melted butter.  When it’s just starting to get tender, squeeze fresh lemon juice over it.  Then season to taste with thyme, salt & pepper.  You can vary the seasonings for a slight lemon flavor or a stronger flavor.  Same with the thyme.

Get Insurance Quotes – Cut Costs!

With the economy the way it is, it pays to get health insurance quotes and quotes on auto and property insurance.  We did this recently, and it turns out that we already have some of the best priced auto and property insurance available.  We did find some property insurance that was considerably lower, however, they didn’t cover leaking pipes such as from a washing machine, etc, or any foundation problems.   Hmmm….those sound like they really need to be covered, so we stayed with the insurance we had.  Plus, we get a discount having auto and property insurance with the same company.  You never know which company is best, though, until you get insurance quotes and compare.
