Menu Plan Monday 7/9/12


Hello from Texas!  We are surviving the hot weather!   We had a cold front come through and it’s been in the 90’s. (Haha)  Thankful for little blessings!

Have you ever gone to the fridge and thought, “What am I going to fix to eat?  I haven’t been to the store yet!”  I have, but if there are eggs and any fresh veggies at all, then a meal can be made.  Notice Tuesday’s meal which is a perfect example of a meal that can be made with what’s on hand.

Monday:  Grilled catfish fillets (grilled on stove top), salad, fried okra

Tuesday:  Veggie Scrambled Omelet – Saute chopped onions, zucchini (whatever veggies you have on hand) in extra virgin olive oil for about ten minutes until tender.   Pour in scrambled egg mixture and cook until done.  Top with cheese.  Serve with homemade fried potatoes or hash browns and whatever breakfast foods you like.

WednesdayMarinated Chicken Breasts from Food Network (grill on stove top), yellow squash & onions

Thursday:  Salmon Patties, corn, salad

Friday:   Pizza, salad

Hope everyone is having a great summer.  It sure is hot here in Texas, so that means we won’t be using our oven very often…as little as possible, in fact.   Looks like most of the country is experiencing hot weather and most people probably won’t be wanting to use their ovens either, so here are some recipes for hot weather:

Hope everyone is having a great start to their summer.  I am finally starting summer break and am thrilled.  I just finished a whole week (actually four full days) of technology training for teachers, and my brain is “fried.”  The presenters presented so much information so fast throughout the week.  It was great info, but it would have been nice to have it at a slower pace. I must say our presenters did a great job!

So, here’s our menu for the week:

School is out for the summer!  Yay!!!  This weekend was relaxing and very restful, knowing that I only have to go to training this week.  We rented a couple of movies called “Flicka 3: Country Pride” and “We Bought a Zoo.”  Both were great movies.  So, here’s our menu for the week.  There are a couple of new recipes that sound really good!

Menu Plan Monday 5/21/12


We had a busy weekend going out-of-town to visit family and attending a wedding in which our son was a groomsman.  He’s supposed to email me photos since I forgot my camera (hint hint, if you’re reading this, my son), and I might post one or two later on.  It was a wonderful weekend.  There’s nothing like being with your kids and grandkids to warm a parent’s heart!

Thursday:  Herbed Quinoa – high in protein with 13 grams per 1/2 cup (dry) serving (I may just use fresh parsley, which is growing in a pot on our deck.  The other two herbs will probably be dried unless I make it to the store.)

Menu Plan Monday 5/14/12

Hope everyone had a wonderful Mother’s Day weekend.  Our son came home to spend the weekend with us.  I told him that was the best gift, him coming home.   We got to talk to our daughter and my mother-in-law on the phone which was great since we couldn’t be together in person.  I received thoughtful presents, beautiful cards, and my husband took us out to eat after church today.  It was a wonderful weekend!

My thoughts went back to my own mother who passed away 12 years ago.  I remember how she helped me with all the many reports I had to do in fourth grade.  Writing was not my favorite thing to do, but she would edit my papers and have me do them over again until I had them correct.  She taught me things about verb tenses and correct grammar usage, things I use nearly every day in blogging.  I think she would be happy to know that I use those writing skills today.

I also remember how my mother was always a room mother for my class at school, made the most delicious cut-out sugar cookies with icing for school parties, made the best pie crust I have ever tasted, always had ice cold Kool-aid for me and my friends on hot summer days playing outside (the brother of one of my friends called her “Mrs. Kool-aid”), and how she would read Luke 2:1-20 often at bedtime, and that was my favorite to have read to me before going to sleep.  I feel blessed to have had her for a mother.  So many blessings!

 

Here’s our menu for the week. I still haven’t decided on Tuesday’s main dish but will have to soon since I’m running out of time. Dessert was easy! 🙂

We’ve had a whirlwind of things going on since Spring Break.  This past week was nice but busy getting ready for our school carnival.   Things should start to wind down now, though.  However, it’s getting harder to think up a menu, but I’ll try.  Here we go:

Hope everyone had a nice weekend. We had a laid-back weekend, one where I could decompress now that all of our state testing is over (for this school year anyway).

It’s hard to think of a menu for the week.  I think we’re going to go for lean and healthy meals except maybe have pizza on Friday.  We didn’t have our pizza last Friday, so it’s still in the freezer waiting to be cooked.
