Menu Plan Monday 4/16/12


Hope everyone is safe from the stormy weekend!  There are so many people who have been affected by tornadoes the past six weeks.  Please keep praying for them and also for those affected by the horrible tornadoes last year.

Speaking of tornadoes, hope everyone has a plan just in case you need to shelter in place.

With that said, here’s our menu for the week:

ThursdaySpinach and Turkey Enchiladas (Last week was so crazy that we didn’t get to make these, so we’ll try again this week.  They sound delicious so I’m really looking forward to having them.  Melissa, if you made these, let me know how you like them.)

I’m Still Here

The past two weeks have been crazy here!  How about you?  There has been so much going on, part of it being trying to finish up state testing at school.  Our special ed testing ends this Friday, so that will be absolutely fantastic to have that done and finished.  Hopefully, things will settle down after that.  So, I just wanted to let y’all know that although I haven’t had much time for posting recently, I plan to get back into my regular posting scedule.  Hope you have a great week!

It’s Just a Month Until Mother’s Day

This year is going by so fast.   Valentine’s Day, Spring Break, and Easter flew by.  Before we know it, Mother’s Day will be here next month.  People will be trying to decide what to give their mothers, whether it’s a Mother’s Day Gift Basket or some other gift.  Then school will be over for the summer and a lot of people will be taking vacations.  I hope things slow down during the summer so it doesn’t seem like it goes by too fast!

Menu Plan Monday 4/9/12

Hope everyone had a happy Easter weekend with family and/or friends.  We were so glad to have our son home from college!  We had a very low-key, chilling-out type of weekend which we needed.  And we had a blessed Easter Sunday.

Technology

When I was a child, people didn’t have computers, cell phones, and most of the technology we have today.  I never heard about audio teleconferencing, online college courses, shopping online, or banking online.   Things have really changed, and this change has enabled people to do so much more than they could ever do before.   I think a lot of people would agree that technology is wonderful, except when computers crash or something doesn’t work!  Other than that, I think we would find it hard to do without technology.

Teaching children with autism is an awesome experience!  True, it is challenging and sometimes puzzling (thus the “puzzle piece”), but it is so rewarding to work with these precious children.  Being able to connect with them, to encourage their language development and then see them using language on their own in the classroom and at home without any prompting makes me, those I work with, and their parents want to celebrate.  We are so happy at each milestone, no matter how small.

If you have ever been around children with autism, you will probably notice their lack of communication skills and lack of eye contact.  Usually, that doesn’t mean they don’t want to connect with you.  It just means that you need to learn how to connect with them!  And I fully believe it is worth every effort!

It is estimated that approximately one million U.S. children and teens are affected by autism.   Boys are five times more likely to have autism than girls.   There is a lot of debate about what causes autism, and no one knows for sure.  It is definitely puzzling!  

A few people with autism have shared more than any research has ever revealed.  Temple Grandin has given tremendous insight into autism.  There is a wonderful movie about her life, “Temple Grandin,” which won seven Emmy Awards and gives the viewer a window into the mind of Grandin.  I’ve watched it four times and want to see it again.  Even my husband, our college-age son, and my mother-in-law really liked it.  My husband ranked it as one of the best movies he’s seen.   I highly recommend it!

Also, there is a fairly new book, I Am in Here: The Journey of a Child with Autism Who Cannot Speak but Finds Her Voice, which was released October 2011 and gives great insight into a young girl with autism.  Speaking through poetry she has written, Elizabeth has typed her thoughts which were not sharable by audible words.  These valuable insights are a great blessing!

Menu Plan Monday 3/26/12

It’s easy to get into a rut fixing the same things every week or so.  It’s really easy for me to do that!  This week, however, I hope to try a recipe from an award winning B & B in Hot Springs, Arkansas.  That’s the Quinoa Salad recipe on Friday.

Bread & Breakfast Recipes

Are you looking for some special recipes?  And not only special recipes but healthy ones as well?  When loved ones and friends come to visit or even if it’s just our own family at home, we like to fix something special for them on holidays or certain occasions and might need a new recipe.  Or maybe we’ve gotten into a recipe rut and fix the same things week after week and need a recipe revival.

Whatever the reason, here are some delicious sounding recipes I’ve seen recently on a Bed & Breakfasts Foodie Blog: Eight Broads in a Kitchen.  These recipes come from Kristie at Lookout Point Lakeside Inn which got an award of Innkeepers of the Year a couple of years ago.  I can’t wait to try them!

 

More Exercise

Getting more exercise has been on my “To Do List” for quite a while.  Finally, I have been able to fit in a long walk two or three times a week.  That helps me lose weight, probably because it speeds up my metabolism.   I’m also trying to eat healthier, drink more water, and cut out some snacks and treats (not completely, though, because that’s when people have a tendency to binge).  I haven’t read any hydroxystim reviews or looked at any diet pills because I’m doing OK with more exercise, healthy eating, and having snacks and treats in moderation.  My goal has been to lose ten pounds, and so far I’ve lost two or three pounds.  I’m headed in the right direction!

Tornado Safety

As a teacher, we have drills several times throughout the school year so that if an emergency situation occurs, teachers and students will hopefully know what to do.  It’s not strange to “shelter in place” because a plan is already in place, and that plan has been practiced several times during the school year.

Our families need to have drills as well so that if an emergency situation occurs, we will know what to do because we have a plan in place that we have practiced at least once or twice. If you’re not sure what the best thing to do if a tornado is headed your way, here are some helpful sites:.

Batteries

One thing I hate is going out to start my car….and it won’t start.  That hasn’t happened very often, but when it has then it’s been a real inconvenience.  Definitely time for a new battery!   Once,  I was leaving a teacher’s workshop and my battery was dead.  After getting a jump start from a friend and calling my husband, I proceeded to the store to get a new battery as soon as possible.

When you need a battery, whether it’s an odyssey pc680 or whatever type of battery your vehicle needs, it’s a huge relief to get a new one that will start every time.

Kentucky Homes

Have you ever been through Kentucky?  We have, a  long time ago.  I remember that area being really pretty with lots of trees and hills.  I imagine the louisville homes are in a nice area although it’s been over thirty years since we’ve been to that part of Kentucky.  Being located on the famous Ohio River, there would be lots to do and see.  I’ve read that Louisville is a big city with a small town feel to it.  I like that!
