Green Pistachio Salad

This is a great salad for Christmas.  I think it would look pretty on the dining table or buffet to have this salad and Cherry Salad side by side.

INGREDIENTS:

  • 1 8-ounce can crushed pineapple, do not drain
  • 1 6-ounce package Pistachio Instant Pudding Mix
  • 1 8-ounce carton Cool Whip
  • 1-2 cups miniature marshmallows
  • 1 cup chopped pecans (optional)
  • 1 small carton cottage cheese (optional)

Mix together and chill.

Insurance, Insurance, and More Insurance!

There’s so much in the news about insurance nowadays, specifically health insurance.  It’s something we’ve always needed along with property insurance, auto insurance, life insurance, and maybe even flood insurance for some.  Back when we were self-employed, we had to have business insurance.   Have you added up the total amount of insurance costs for each month?  It’s quite a bit!  Makes it a necessity to get the best price on each type of insurance.

Cranberry Chicken

Here is an easy festive chicken dish:

INGREDIENTS:

  • 10 large chicken breasts
  • 2 tablespoons olive oil
  • 1 can whole cranberry sauce
  • 1 package onion soup mix
  • 1 small bottle of Fat-free Catalina Salad Dressing

Brown chicken in olive oil.  While browning chicken, mix cranberry sauce, onion soup mix, and salad dressing.  Put chicken in 9 x 13 inch baking dish and pour sauce over the chicken.  Cover with foil.  Bake at 350 degrees for about 1 1/4 to 1 1/2 hours.

End of the Year

Can you believe it’s the end of the year and December is already here?  This year has flown by so fast.  Before we know it, people will be making out their New Year’s resolutions for everything from spending less time on the computer to taking a fat burner to lose weight.   I’m not thinking about resolutions yet, though, I’m just trying to get ready for Christmas!

Recipe from Central Market: Old-Fashioned Sugar Cookies

This is definitely a recipe for holiday occasions.  I’m not sure if this is a recipe they use in their bakery or one they recommend.  Either way, it sounds delicious!

INGREDIENTS:

  • 2 cups sugar
  • 1 cup shortening
  • 2 eggs
  • 1 teaspoon salt
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 5 cups flour

Cream sugar and shortening in a large bowl.  Add eggs.  Blend in salt and vanilla.  Mix baking soda and buttermilk in a bowl.  Add flour and buttermilk to sugar mixture, alternating until the dough is stiff enough to handle.  Take some of the dough and roll out on a floured surface.  Roll it out to 1/4 to 1/2 inch thick, depending on how crisp you want the cookies.  Cut out with cookie cutters and place on cookie sheet that has been covered with parchment paper.  Sprinkle with colored sugar.  Bake at 350 degrees for a few minutes, until lightly browned.  Let cool on cookie sheet for 5 minutes before removing them.

Bathroom Remodeling

Someday, I would like to remodel our bathroom.  Our daughter has given me some great ideas!   I don’t know if we would replace the bathroom lights or not.  But it would be nice to take off all of the wall paper (there’s a lot of wall paper!) and paint/texture the walls, sand the cabinets (this would be a big job) and paint them.  I like our flooring, so that wouldn’t need to be replaced.  So…maybe someday!

Four Foods On Friday 98

1. How many cookbooks do you have? (1-10, 11-20, 20+)

I have 20+.   (around 27 or so, different sizes)
2. Where do you keep your large utensils (such as slotted spoons, spatulas, etc)?

I keep them in a utensil holder on the counter.   Utensils that are not used very often are kept in a drawer.
3. What is your countertop made of?

Formica.
4. Do you use canisters in your kitchen?

Yes, they are Tupperware canisters that we got for a wedding present, and they’re great because they’re airtight.  I keep the two smaller canisters out on the counter.  I keep the two larger ones in a cabinet.

Health-Wise

Medical costs are getting so expensive!  I think some things need to change, but changes need to be carefully studied and considered.  What should I do as an individual?  Do I need a health savings account or what exactly do I need?  Right now, I don’t know for sure.  This is something I need to research, and I also need to put in my two cents worth about health care to my representatives.

Gift Ideas

During this time of year, many people are trying to think of the best gift to buy for friends, family, co-workers, etc.  For someone who likes to read, Amazon books might be a good place to look for a gift.  For the person who loves to cook, then a store or website that carries kitchen items would be great places to shop.  Whatever their main interest, it makes it easier to shop if you look for those types of gifts first.

Hershey’s Made-From-Scratch Microwave Hot Chocolate

This makes delicious hot chocolate to have during the holidays!

INGREDIENTS:

  • 1 cup milk (we use 1% or 2% milk)
  • 2 tablespoons Hershey’s Cocoa
  • 2 tablespoons sugar (or 1/2 sugar & 1/2 Stevia equivalent)
  • 1/4 teaspoon vanilla
  • dash salt
  • Canned Light Whipped Cream

Heat milk in the microwave on high for 1 to 1 1/2 minutes. (I use a microwave-proof mug.)  Add the rest of the ingredients and stir well.  Top with whipped cream.

Great Christmas Music With KLTY’s Online Radio Player

I enjoy listening to awesome Christmas music on KLTY whenever I have a chance.   I listen every day while doing things at home, working on the computer, and when driving somewhere.  One thing I really like about KLTY is not only their great selection of Christmas music by well-known artists,  but also their “Christmas Wish” for families who have found themselves in an economic crisis.  They interview the person online who nominated the family and explain the family’s situation, and then they actually talk to the recipient of the gift (maybe $2,500 to catch up on mortgage payments, or money to make car payments they’re behind on or needed car repairs, or money to pay utilities, and always money to buy Christmas presents for the children).   The recipients are usually overwhelmed and so thankful, and to me, this is a very touching and heart-warming part of the program.
