Menu Plan Monday 2/25/13

Since our son is getting married in June, I’ve been looking for a dress to wear to the wedding, one that would be good for an afternoon wedding.  I finally found one that is exactly what I wanted.  The mother-of-the-bride chose a blue dress with the length being a couple of inches below the knees.  So, I needed to find one the same length and a different color.  I decided on a black dress with a shimmery gray/silver cardigan.  It has an attached printed waistband, the print containing black, white, and a shimmery silver (all colors in the wedding).
I already have a dressy black purse that I’ve used only once at another relative’s wedding, so all that’s left to look for are shoes and jewelry. (plus losing at least five pounds minimum)

We’ve been doing some planning for the rehearsal dinner, too.  It was a quick and unanimous decision to have Mexican food, and we’re checking into places that do catering.  Right now, Abuelo’s is at the top of the list.  We’re thinking that Sopapilla Cheesecake would be good for one of the dessert options, but we’ll need several because we have 40 people on the list right now for the rehearsal dinner.  We’ll see.

.It’s going to get colder this week, so soup sounds good.  Here’s our menu for the week:

Sunday Thoughts

Just having a lot of Bible knowledge or going to church every Sunday is not what being a Christian is about.  It’s about being transformed into what God would have us become and about loving God with all our heart, soul, mind, & strength.  It’s about loving others as well.  It’s about having a servant spirit like Christ and being transformed more and more into being like Him every day of our lives.  It’s about being transformed and changed because of the great love, mercy, and grace that God has showered on us through sending His one and only Son into this broken world… to save us!

Low-Fat Creamy Tomato Basil Soup

.We really like La Madeleine’s Tomato Basil Soup.  There’s one problem, though, it’s absolutely loaded with fat!   We found a compromise…a great tasting soup that’s low in fat with only 3 1/2 grams of fat per serving.  Recently, I tried La Madeleine’s lower-fat version of their soup, but I like Progresso’s soup better.  We like Progresso’s Creamy Tomato Basil Soup so much, in fact, that we buy several cans at a time.

* Note:  I haven’t received anything from Progresso.  This is strictly my opinion.

 

Menu Plan Monday 2-18-13

I mentioned that our son is getting married.  Well, I’ve been looking at and trying on dresses for the wedding, and I’ve come to one conclusion.  I’ve got to lose at least five pounds!!  So here’s our menu with an attempt to eat healthier and leaner:

Monday: Salmon Patties, corn, green beans

Tuesday: Parmesan Fish Sticks (healthy recipe), salad, carrot sticks

Wednesday: Chicken, potatoes, okra

Thursday: Chef salad with grilled chicken

Friday: Maybe go somewhere out to eat…fish would be good!

Sunday Thoughts: Strangely Dim

Several years ago, when my mother only had a few days left to live, I would sit in her room, reading my Bible.  I knew in situations like those that God was and is always the true source of comfort.  The chorus of one song kept going through my mind over and over again, “Turn Your Eyes Upon Jesus.”  I knew He was there with me in those very hard days.

Francesca Battistelli posted on Facebook this past week that she has a new song out “Strangely Dim.”  This immediately caught my attention…the words struck a chord in my heart because those words are in the song, Turn Your Eyes Upon Jesus.  I quickly listened to her new song on YouTube and loved it.   No matter what anyone is going through in their life, it’s amazing how the tough things in life grow dim when we have our hearts focused on Jesus.  When we trust in Him, we can talk to Him in prayer and turn any and all problems over to Him.  He not only is God’s Son…He is also our best friend, if we open our hearts to Him!  He can comfort us in the way no person can.

Sidenote:  Francesca is one of my favorite female contemporary Christian music artists.  We (our son, my husband, and I) heard her live at a Celebrate Freedom concert at Southfork Ranch (yes, the one that was in the TV show Dallas) a couple of years ago, and we were impressed with her sincerity and commitment to God.  We were impressed how she was seven months pregnant and was sitting on a stool out in the Texas heat (the stage was shaded and she probably had a fan blowing on her).  She must have felt a great commitment to share her songs.  By the way for those of you who keep up with her, they have another new baby, a little girl.

 

Weight Watchers Recipe for Potato Soup

Here’s a recipe from a new church cookbook I bought.  This sounds like it would be a good recipe.

INGREDIENTS:

  • 3 cans chicken broth
  • 1 package Ore-Ida O’Brien Potatoes
  • 1 package Non-Fat Pioneer Country Gravy Mix
  • 1/2 cup water
  • 4 ounces Velveeta Cheese

Cook the potatoes in chicken broth until tender.  Mix gravy mix with water and slowly add to the potato mixture.  Heat thoroughly.

Serves 8 (1 cup servings)

1 Weight Watchers point per serving

 

Pei Wei Calories

We love to eat at Pei Wei, and our whole family does as well as many of our friends.  If you’re trying to lose weight, it’s nice to know that you can figure out the calories beforehand by going to their Pei Wei Nutrition Information site.  I really like their lettuce wraps with chicken, and the sauce only has 70 calories.  (I would have guessed a lot more)  That’s nice to know.

I am definitely trying to lose weight after going to try on dresses for our son’s wedding this summer.  Oh my!!  Those holiday goodies are still with me so I really really need to lose five to ten pounds.  It’s so easy to walk in my closet and pull out my looser fitting clothes to wear to work.  But going to try on clothes made me determined to lose weight!  I’ll try to keep you posted how I do.

Our son is getting married!! Ten years ago, we were in the middle of wedding plans for our daughter, and now we’re in the middle of wedding plans for our son.  Wow!  Ten years have flown by!  So, we’ve been working on the guest list, getting ideas for catering for the rehearsal dinner, and I’ve been looking at dresses.  There are so many things to do in preparation for a wedding.  Anyone else planning a wedding?

Battle of Athens, Tennessee, 1946

Has anyone seen the TV movie about Athens, Tennessee?  I haven’t and didn’t know anything about it.  This is a little known event in U.S. history that, in fact, I’m just now reading about. Maybe we talked about it in one of my history classes in high school or college, but I don’t remember.  It’s very interesting and illustrates how corrupt some government officials have been. This historical marker is a reminder of that event.
