We’ve had new neighbors for a while, who happen to be really nice, but I miss seeing our old neighbors. Their daughter, who is elementary school age, loves to ride horses, and her parents gave her riding lessons at an equestrian center back when they were our neighbors. I don’t know if the center used english horse tack or any of the details, but I do know that our young neighbor absolutely loved to ride horses there! I wonder if she still rides. The answer is more than likely “yes!”

Fresh Fruit & Angel Food Cake
With Mother’s Day coming up soon, I thought it would be good to post one of our family’s favorite cakes for birthdays and special occasions. (A dear family member would always request this for her birthday.) So here’s the recipe again in an easier to read version:
INGREDIENTS:
- Angel Food Cake ( I buy a round cake, or to make a rectangular cake as pictured then I buy 3 Angel Food Bar Cakes. If you can’t find the smaller rectangular angel food cakes, you can cut up a round cake and still make it look like a rectangular shaped cake when finished.)
- Cool Whip, largest size
- Fresh fruit such as strawberries, blackberries, raspberries, blueberries, & kiwi
DIRECTIONS:
One thing about this cake is that if you leave the cake whole and don’t pre-cut it, it’s very hard to serve without making a mess of the piece you’re trying to cut. That is why I started pre-cutting the cake into individual pieces, placing all the pieces side-by-side on the cake plate, and then “icing” the cake pieces with Cool Whip to make it look like one whole cake.
Once this is done, you can decorate the top of the cake with your favorite berries and kiwi once they have been well washed and dried. (Note: Bananas are not good to use because they turn brown.) Here is another picture of the top of the cake:
Music & Porcelain Boxes
When I was growing up, I really enjoyed music boxes. I had two beautiful ones that were gifts. One of my favorites was musical ballerina jewelry box that was given to me by my daddy. Several years ago, I bought a music box that had violins on the top because my husband plays the violin and that made the box special to me. Musical boxes have long been a fascinating collector’s item, entertaining young and old alike. There’s something about a beautiful and ornate little box producing such a pretty sound that attracts people to collect them.
Limoges Porceleain Boxes are another collector’s item that come from a French tradition that is several centuries old. They were first collected by French nobility and now are collected by people everywhere who enjoy their beautiful design. Some are traditional in design and some are whimsical. They are delicate, however, and need to be handled carefully.
Capture Special Memories
A lot of kids and college students have recently had Spring Break. Families have been traveling, being sure their cameras and camera cases were packed in order to capture those special moments. I love looking at pictures from trips we took with our kids. Those are special memories, especially now that our daughter has her own family and our son is in college. Now, they’re making their own memories.

Table Time: Why Eating With Family Matters

It’s certainly not getting easier to sit around the table with your family and a wholesome dinner. If you’re a working mom, you probably drive straight from work to pick your kids up from practice or another after-school activity. Grabbing a few burgers on the way home or eating sandwiches in front of the TV can be an inviting option when you’ve such had a long day. And, it’s hard to make kids themselves sit still for 30 minutes to share a little time around the dinner table. There are benefits to making the effort to have a family meal, however. Even if you can’t do it every night, consider making it a 2 or 3 times a week tradition.
Being Here Now: Sitting down to eat is a form of thoughtful meditation. It’s a time to relax and reflect on the day, in a conscious manner. Try it sometime—eating while standing in front of the fridge or while watching TV just isn’t the same. Sitting around a table lets everyone in your family have a little chill out time from work, from homework, from cell phones and other technology. It’s a type of relaxation that we don’t get enough of these days.
Create Stability: For kids, stability is created by events they can anticipate, that happen again and again. Making family dinner a usual occurrence in your household is one easy way to provide this stability, and to give your kids a sense of control in their lives. Several scientific studies have found a significant positive correlation between a family’s eating habits and the amount of conflict they experience. Families with healthy, stable eating habits had less turbulent relationships than those who ate junk in front of the TV.
My own family, while growing up, was not without problems. My older brother decided to drop out of high school and fought with my dad constantly. Through it all, we still had family dinner (although my brother didn’t always attend). As a younger kid, this stability helped me understand that we were going to get through the difficult period, and that things were going to be okay.
Make Time to Talk: Especially as your kids move into their teen years, actually talking to them about anything of note can become difficult. They clam up, and respond to any questions with a head nod or a mumbling “uh huh.” Eating around a table naturally encourages talking; it’s a low-stress environment for sharing and communicating with one another. It’s is a great opportunity to sneak meaningful discussions into your time with your preteen or teen, without them even noticing.
Eat Better: With nearly ¾ of the U.S. population overweight or obese, many people are doing all they can to stay healthy. Eating meals around a table is a simple step you can take for you and your family, to ensure that everyone eats better. Why? The more conscious you are of eating, the likelier you are to only eat the amount of food you actually need. Unlike eating in front of the TV, you won’t be shoveling food into your mouth without even noticing it.
And, meals served around a table are likelier themselves to be healthier. When is the last time you served a butter-laden bowl of instant mac and cheese for a family meal around the table? You’re more likely to put together a balanced dinner when it’s served in a bit more formal setting. So what’s the bottom line about family dinners? They help you relax, reconnect, eat, and feel better. They take a little more energy, but will certainly pay off over time for you and your family.
Wordy Wednesday: Kimbell Art Museum
This picture was taken last summer while our son and I were visiting the Kimbell Art Museum in Fort Worth. This colorful piece of art was located in front of the museum and caught my attention because of its fanciful nature, while inside were many older, traditional types of artwork from well known artists. There were also relics from ancient Asia and Africa.
Although our son had to visit an art museum for an art class he was taking last summer and that’s really the main reason we went, we enjoyed walking through and seeing ancient treasures from the past as well as traditional paintings. It was an enjoyable afternoon.

Whenever we would travel over 800 miles in our minivan to visit Grandma, Christi always got the back bench seat where she could sleep to her heart’s content. Her younger brother always sat in the middle section.
When I think back to this memory, I realize how fast time has flown. So take time with your little ones! They are more important than a spotless house. They are more important than all the things on a “To Do” list. Babies grow up and move away, but housework and “To Do” lists remain. Take time to rock your baby, to read that extra story to your child even though you’re so tired (one day you’ll wish you could read it to them), to do the little things that are important to your child that make them feel loved. I don’t regret not doing certain things so I could spend more time with our kids.
If you don’t know exactly what is important to your older kids then I recommend reading “The Five Love Languages of Children” and “The Five Love Languages of Teenagers.” They are worth the time invested in buying and reading these books!

Conference & Three-Way Calling
When our daughter was a teenager, she and her friends used three-way calling to their advantage. She would call two friends who had three-way calling, and then each of them would call two people. They would end up with their own conference calling. Conference calling is used by people for various reasons.
Have you ever used three-way calling? We haven’t in a long time, but when there’s a need to talk to family members about something, then it’s great.
Valentine’s Day Giveaway: “Fireproof

To celebrate this day, I’m having a giveaway for the DVD “Fireproof.” My theme for this giveaway is “Love in marriage.” If you haven’t heard of “Fireproof,” it’s a great movie about saving a marriage that’s on the brink of divorce. All hope seems lost for any chance to save the marriage, but through practicing an active love that meets the needs of the other person, the marriage in the movie was saved. Not only was it saved, but it transformed into a beautiful relationship, deeper than ever before, because it was based on true, agape-type love. This doesn’t just happen in movies. I’ve read about real accounts of this happening, and I’ve seen it happen in the lives of two girlfriends of mine, one several years ago and the other, many years ago. So what the movie portrays is not just a bunch of hype. It’s real!
Even though marriage can be hard at times, a couple is in it together and can still “dance” even when times are stormy because of the agape love they have for each other and the commitment…the promise…they have made to each other. But more importantly…the promise they have made before God. So if you know someone who’s marriage is falling apart, maybe you could tell them about this giveaway, or you could enter the giveaway and give the DVD to them if you win. Bird Watching
My mother-in-law loves to bird watch! Her backyard is full of trees and provides the perfect setting for an avid bird watcher. She has binoculars so she can see birds up close, and I imagine any bird watcher has scopes so they can see better. She has several bird feeders, two on each patio plus she puts bird feed out on her patio table which she really doesn’t use any more except for a giant bird feeder. We all enjoy watching the birds with her when we’re visiting. There’s something relaxing about watching birds!
