New Homes in Minneapolis/St. Paul Area

Even though I’m a Texas girl and was born and raised in Texas, my parents were married in Minnesota.  I’ve never been to that state but I wonder what it’s like.  What would it be like to live there?  What are their homes like?  I’ve seen ads around the Minneapolis/St. Paul area for new homes.  Minnetrista New Homes are 40 miles west of Minneapolis which sounds like a nice distance, close enough to drive into the big city for shopping or a special event.  Eagan New Homes are only 15 miles south of the metropolitan area which is just on the outskirts of the twin cities.  Shakopee New Homes are close by, too.

Although we’re not planning to move to Minnesota, it would be fun to visit the area and see what it’s like.  It would be fun to check out the new homes and compare them to homes in Texas.

Moving Long Distance

Do you have any friends or family who are Moving Overseas?  In the past, we’ve had several friends who have moved overseas, one family moved to Germany and some other friends moved to Japan.  I can’t imagine moving that far away!  There is so much involved in moving anyway, and moving that distance seems like it would be even more involved.

Our friends probably chose from some Long Distance Moving Companies to move all of their things.  How would you pack delicate items and things you wouldn’t want to lose?  China and crystal would have to be carefully packed as well as any sentimental items.  Both families had kids, so there were all the things you need for kids that had to be packed.  Packing would have to be done in an organized manner in order to find necessary things once everything was unpacked in the new location.  I would definitely want movers who were experts in the field!

Child Care

Choosing the best child care for one’s children is an important aspect of being a parent. There are some good child care facilities and some that aren’t so good. A good babysitter should have training in babysitter safety. The American Red Cross offers an American Red Cross Babysitter Class that would be excellent for those in child care.

When our kids were little and growing up, we never had to leave them at a babysitter. I’m thankful that my parents were able to help keep each of our children when they were little.  Our grandchildren go to an excellent preschool that has well-trained and loving staff members. They have cameras in the classrooms but not because they’ve ever had any problems. The cameras reassure parents that their children have the best of care. As you can see, it’s important for parents to research and do their homework. Then they can choose the best child care available for their children.


Thankful for Electricity!

Have you ever experienced having no electricity? It’s awful! We depend on electricity for so many things, and it’s easy to take it for granted and not realize what a blessing it is in our lives. A teacher friend was telling me how she did without electricity for several days during a winter storm. She didn’t have any honda generators so she stayed in bed with piles of blankets and got up only when necessary. That’s definitely not fun and I hope we never have to experience that!  I am very thankful for electricity!

Bird Watching

My mother-in-law is an avid bird watcher.  When we’re visiting her during the summer, we sit outside and watch the birds at the bird feeders and in the woods behind her house.  During the winter, we sit in her living room and look out the sliding glass doors at the birds eating bird feed on her patio table and the bird feeders.  She also has a heated bird bath which the birds love (and even a small fox), and it’s fun to watch the activity in the bird bath.

In order to see the birds better while sitting inside, binoculars come in very handy! I’m not sure what brand my mother-in-law has, but I don’t think they’re ncstar binoculars.  If you know anyone who is an avid bird watcher, they probably have binoculars, too.   If they don’t then that might be a good gift idea!

Behind on Sleep

When you have little ones, it’s sometimes hard to get the sleep you need.  Our daughter, son-in-law, and two little grandsons came to visit this past weekend.  Our daughter, Christi, and s-i-l had four hours sleep the night before from staying up late working on a freelance job.   Their three year old doesn’t know to sleep late on Saturday mornings and so he was up early the next morning.  Christi and her husband were definitely behind on sleep!   They didn’t take sleep aids but just tried to squeeze in naps here and there. They did get a better night’s sleep Saturday night, so that helped!

Annual Children’s Clothing Resale Event

Our daughter, Christi, loves the children’s clothing & items annual resale event out where they live.  It’s held at a convention center and is a very popular event.  She has to price all of her things she wants to sell and enter them into the computer beforehand.  Then at the time of the event, every item has been tagged and can be scanned with a barcode scanner.  I don’t know if they use a Symbol LS2208 or what type of scanner they use, but I do know that it makes this huge event run much smoother.  Check-out time is greatly reduced, and each person selling items is more assured of getting the money they are due to get.

Brownies!

I don’t need the safest fat burners, but I will need to exercise more this next week.  Our son came home from college for the weekend, and we’ve been having brownies.  Not just plain brownies mind you, but brownies topped with cooked fudge frosting, a large scoop of Dreyer’s Slow Churned Rich and Creamy Vanilla Yogurt (low-fat with actual yogurt cultures) and then strawberries on top.  At least the strawberries are healthy and the yogurt is somewhat healthy!

Tasty Tuesdays: Powdered Sugar Cookies

My mother-in-law’s favorite sugar cookie recipe is a special family recipe!  She’s been making these cookies for years and got the recipe from another relative.  My m-i-l needs to gain weight so I suggested we make these cookies while we were there visiting this summer.  I don’t know if she gained any weight….but I definitely did!!  Oh well, now I remember why I rarely bake cookies.

These cookies are soft and yet delicately crisp at the same time.  They’re rich tasting and melt in your mouth.  They should be rich tasting considering they have one cup of oil and one cup of butter (the Pioneer Woman would like all the butter in these!)  In my opinion, I think these cookies would be great to serve at a wedding or baby shower, especially if rolled in colored sugar to match the colors of the shower.  They’re definitely not healthy so really these should be just special occasion cookies.  Here’s the recipe:

INGREDIENTS:

  • 1 cup sugar (plus extra sugar to roll the cookies in)
  • 1 cup powdered sugar
  • 1 cup butter
  • 1 cup canola oil
  • 1/4 tsp salt
  • 2 eggs
  • 4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla
  • Colored sugar for special occasions

DIRECTIONS:

Combine the sugars, butter, oil and salt.  Beat well with mixer.  Add eggs.  Add dry ingredients.  Chill dough.  Make into balls, roll in sugar, and place on ungreased cookie sheet.  Bake at 350 degrees for 8 minutes.

Here are the cookies we made at my mother-in-law’s house.  Wish I could take one off the plate right now!



Backyard Fun

When our son was little, we enjoyed hanging out in our backyard as a family.  We had the typical swingset, however a wooden swing set would have been really nice.   Little Tyke toys were also a part of our backyard toy supply.  My favorite part was one of those heavy plastic swimming pools that was probably six feet long, four feet wide and one foot deep.  Our daughter, Christi, and I would get in the pool and splash around, too.  I had several potted flowering plants plus Crepe Myrtle trees and Cana Lilies in the backyard, so it was like being in our own little mini-tropical area.  We had a lot of fun playing, relaxing, and enjoying our backyard together.

Happy 4th of July Weekend & Recipe for Reduced-Fat Brownies

Happy 4th of July to everyone here in the states!  Hope you have a wonderful weekend and enjoy being together with family &/or friends.  To those of you in other countries, hope you have a great weekend too!

I wish we could sit down at my table and have some homemade chewy fudge brownies and fresh-made lemon tea together.  I would tell you about the Mickey Mouse high chair that you can see in the picture.  It was our daughter’s and then our son’s high chair many years ago.  The last couple of years, it was used by our grandson “J,”  and then baby “C” came along and “J” graduated to a booster seat.  So now, “C” sits in the place of honor where his mommy sat 28 years ago.

Then I would probably show you the blue pottery between the plant and lamp.  Our son-in-law made that for me one time, I think for my birthday.  It’s one of my treasures because it was handmade by him.   There are a lot of other things we could talk about and I would love to hear about you!  That’s one thing I miss about the internet.  Everything is usually so fast paced and people are so far apart.  But I’m thankful that I’ve gotten to make new friends, and at least we can “talk” to each other online.

Here’s an easy recipe for the reduced-fat brownies you see pictured.  You cannot tell they’re reduced-fat. Our son (college age)  even commented that they were good brownies! (I used to always make things from scratch, but this past year I have gotten to the point sometimes of needing something easy and quick.  Walmart had these mixes on sale for 75 cents a while back, so that was really a great deal.)

Here’s the recipe:

INGREDIENTS:

  • Duncan Hines Chewy Fudge Brownies mix for 13″x9″ pan
  • 1 egg  (instead of 2 eggs – these were gooey brownies so you might want 2 eggs if you prefer a more cake-like consistency)
  • 1/6 cup unsweetened applesauce
  • 3 tablespoons water (instead of 1/4 cup)
  • 1/4 cup oil (instead of 1/2 cup)

Mix the above ingredients until well mixed, about one minute.  Bake in greased 13″x9″ pan at 350 degrees according to directions on the box.
