Menu Plan Monday 7/18/11

Hope everyone had a great weekend!  It’s so great having our son home from college for the summer.  His girlfriend came for the day on Saturday.  I fixed a big dish of lasagna, a salad, and homemade garlic breadsticks.  We had strawberries and frozen yogurt for dessert plus his girlfriend brought me some Pepperidge Farm Milano Milk Chocolate cookies.  Yummy!  I hadn’t had any of those cookies in a long time and forgot how delicious they are.  The great thing about the lasagna is that we can have leftovers Monday night!  Yay for leftovers!!

Monday:  Leftover lasagna, salad, breadsticks

Tuesday:  Green Chile Chicken Enchilada Casserole, black beans, guacamole

Wednesday:  Leftover enchiladas and black beans

Thursday: Chicken fajitas and all the “fixings”

Friday: Chicken Teriyaki

Menu Plan Monday 7/4/11

Hope everybody has a safe and happy Fourth of July! This is a busy week for us plus it’s hot in Texas, so here’s our cool menu:

Monday: Hot dogs, beans, icy cold fruilattes made with fresh Texas peaches, organic strawberries & banana

Tuesday: Hamburgers, fries

Wednesday: Chicken tenders, veggies

Thursday: Eating out (Yay!!!)

Friday: Haven’t a clue right now 🙂

Menu Plan Monday & Recipe for Cheese Spatzle

The summer is flying by! Here it is time to do another menu for the week. One thing we do want to have is a repeat of last week’s fresh vegetables with a fried okra, squash, & onion medley. I made a big skillet full last week, and there were no leftovers. This time, though, I think I’ll use yellow squash and zucchini. My mouth is watering just thinking about it!

I just remembered something!  We bought some egg noodles imported from Germany at Aldi’s today. They have a recipe on the package that sounds so yummy. Our son especially liked the sound of it, and you moms know how it is when your children are home from college for the summer.  I fix his favorites when I can!

Monday: Skillet grilled chicken, Fried Veggie Medley (fresh okra, squash, zucchini, & onion in a light cornmeal batter fried in olive oil just until barely done), salad

Tuesday: Chicken Alfredo with Broccoli (a favorite of my husband and our son; must be made with butter), salad

Wednesday: “Cheese Spatzle” recipe on package of Aldi’s Spatzle Swabian Egg Noodles~Homemade (with Swiss Cheese, chopped onions and a little butter) with added chicken, salad

RECIPE FOR CHEESE SPATZLE

INGREDIENTS:

  • 1 bag Deutsche Kuche Spatzle, 17.6 ounce bag (skinny egg noodles from Aldi)
  • 7 ounces grated Swiss Cheese
  • 1-2 cups chopped onions  (These are a must!  The browned onions give this recipe a wonderful flavor!)
  • 1 tablespoon butter
  • 2 tablespoons milk (optional – this is not in the recipe but I would add a little milk next time to make it less dry)

Cook the noodles according to directions on the bag.   Drain and put in casserole dish.  Layer noodles with cheese and butter.  Bake at 375 degrees for 5 minutes or until browned.  While noodles are baking, saute onions in olive oil until browned a little.  Add to the top of the noodles after they come out of the oven.  Serve with salad.  Enjoy!  (This recipe was a hit with my husband and our son.)

Menu Plan Monday & Strawberry Shortcake

Hope all the dads out there had a nice Father’s Day yesterday.  After church, we (my husband, our son, and I) went to Qdobas to eat lunch after church. I received a coupon by email from them on Friday saying, “Bring this coupon AND Dad in to Qdobas for a free entree for Dad with the purchase of another entree.”  That is such a good deal, and since we really like Qdobas, that’s where we went.  By the way, if you would like to sign up to get freebies and discounts ever so often by email then here’s where you can sign up for a Qdobas Reward Card.

Later after we got home, we had an easy-to-make dessert.  The presentation is what makes something simple look fancy.  (remember my Fancy S’mores?)   Here’s our fancy strawberry shortcake that we put together in less than 10 minutes total:

INGREDIENTS:

  • Pre-made shortcake cups (or sliced pound cake or angel food cake)
  • Sliced strawberries (We try to use organic!  Be sure and wash non-organic strawberries extra well because they are high in pesticide residue!)
  • Dreyer’s Slow Churned Rich & Creamy Vanilla Yogurt Blends or your favorite frozen yogurt or ice cream
  • Whipped Cream (we like the extra creamy)
  • Hershey’s Dark Chocolate Syrup to drizzle on the very top
  • (Paper doilies from Dollar Tree)

Place shortcake cup on a pretty plate.  Cut strawberries in half and place around base of shortcake.  Top with frozen yogurt and top with whipped cream.  Drizzle chocolate syrup on top.  Place plate on top of a paper doilie for a fancy looking dessert that’s so simple.

Menu Plan Monday 6/13/11

It is so nice to have our son home from college!   We’ve been enjoying having him here with us for meals, and I’ve been getting some blogging advice from him, too.  He stays busy working, but we manage to squeeze in some fun activities.  His girlfriend made a one-day trip and drove over to see him yesterday.  We enjoyed all eating lunch together here at the house.  Later in the afternoon, we went to J.C. Penney’s for their super sale plus we all had $10 coupons.  We saved a ton of money!

Monday:  Leftover Rotisserie Chicken from Central Market (Chefs Prepared Citrus Peppercorn)  which are still on sale for $4.99, regularly $7.99;  also leftover organic red potatoes with French-style green beans and salad

Tuesday:   Green Chili Chicken Enchilada Casserole that we never did have last week, fresh fruit for dessert

Wednesday:  Italian Chicken Pasta, salad

Thursday:  Salmon Patties, corn, broccoli

Friday:  Homemade pizza using Pillsbury Thin Crust Pizza Dough, pre-cooked bacon (our son’s request), onions, red bell peppers, green olives, pizza sauce, and Italian Style 6 Cheeses (Great Value brand)

Menu Plan Monday 6/6/11

Yay!!! School is out for the summer! I still have workshops to go to, teacher’s manuals to study, online studies to do, plus start making thematic lesson plans for the next school year, but…I can sleep late if and when I want to (except on workshop days and on Tuesdays when we volunteer at the food pantry). I am so exhausted that I don’t want to cook anything much for a couple of days.

Monday:  Eat at Pei Wei (we have a coupon for a free entree – their newest entree, Caramel Chicken) to celebrate the end of school and our son having a 4.0 grade point average. Way to go, son!!!! Our whole family really likes Pei Wei, by the way.

TuesdayRotisserie Chicken Tacos with black beans  (FYI, Central Market has their Rotisserie Chickens on sale for $4.99 this week, regularly $7.99.  They are delicious and better than the ones you get in the other grocery stores!)

Wednesday:  Salmon Patties, corn, broccoli

ThursdayGreen Chili Chicken Enchilada Casserole

Friday:  Homemade pizza using frozen roll dough for the pizza crust.  I’ll let the rolls defrost in the fridge for several hours first.  Has anyone ever tried this before?  I see recipes using frozen bread dough but not for rolls.  I want to use up these rolls, so I’ll experiment and see how this works.

Menu Plan Monday 5/30/11

This is the last week of school.  Yay!!!!!!  Teachers are just as excited as the kids.  There’s no school since it’s Memorial Day, so we’re having a special meal.  Actually, it’s one that our son, who’s home from college for the summer, requested.

Our son really likes the cheeseburger from Chili’s with barbecue sauce and onion straws, so that’s what we’re planning for Monday.  I found a recipe for onion strings (straws) from the Pioneer Woman, so this should turn out to be one delicious hamburger!!!!  My mouth is watering now just thinking about it!   (Oh, and if you need some cute cupcakes for a special graduate, here are Graduation Cupcakes.)

Monday:  Chili’s Shiner Bock Burger made at home (watch for a post soon with the recipe) & onion straws, fresh strawberries and frozen vanilla yogurt for dessert

Tuesday:  Chicken Alfredo with Broccoli

Wednesday:  Chicken Tortilla Soup

Thursday:  Italian Chicken Pasta, salad

The school year is nearing the end and everyone is so ready for summer, students and teachers alike. I’m sitting here without much of a clue as to what we’re going to have on our menu except I do need to use up fresh produce, so that’s a given for this week:

Monday: Salmon patties, cauliflower, yellow squash and onions

Tuesday: Chicken Fajitas with onions, zucchini strips, & bell pepper strips

Wednesday: Chicken Tortilla Soup

Thursday: Leftover Chicken Tortilla Soup

Friday: Pizza

Hope everyone had a wonderful Mother’s Day!  I did, and I’m so thankful for my wonderful family and love them so much!  Being a mother is one of life’s greatest joys!
This is going to have to be short because it’s late, and I have to get up at 5:30 in the morning to get ready to go teach. So, here’s our menu:

Menu Plan Monday 5/2/2011

First of all, please pray for all of those in Alabama who have lost a loved one, for those still missing, for the hundreds and hundreds who have been injured, and for all of those who have lost their homes. Our hearts and our prayers are with them!

Menu Plan Monday 4/25/11

Hope everyone had a wonderful Easter yesterday! After church, we went out to eat and then had a nice afternoon before our son had to leave to go back to college. I had an Easter basket waiting on the dining table for our son, who’s a sophomore and still enjoys getting the candy!  I’ll probably continue having one for him for several more more years.  (I had an Easter basket for Christi & Brian until they had children of their own.)
