Happy New Year to all of you! This week is going to be busy for us, and so we’re playing it by ear again. Needless to say, this menu is subject to change as well.  There are some new recipes this week that sound really good and healthy..

Do you feel like there’s so much to do to get ready for Christmas and not enough time to get everything done? That’s how I feel! The weekends pass by so quickly and now it’s time to start another work week.
Last week was so busy, and we didn’t get around to having hardly anything on our menu. So there are some things on our last menu that were carried over to this week.

Menu Plan Monday 12/3/12

As I’m writing this on Sunday, I’m still remembering all the blessings we have.  Faith in God and His Son Jesus, family, and friends mean so much.  Just today, I got to reconnect with an old friend, Norma, who was visiting at church.  We were best friends in high school along with Beth.  The three of us were known as “The Three Musketeers” because we were always together.  What special memories!

After church, my husband and I had a lunch date at la Madeleine’s, our favorite place for a restaurant date!  It’s always yummy and has great atmosphere (kinda like being on vacation).   I saved half of my chicken salad and put it on their bread along with blackberry preserves to make a delicious sandwich for lunch tomorrow, so my lunch is already made for work.  Nice!

Thanksgiving came and went so fast!  We had a wonderful week being with family, a week filled with many blessings!

The next four weeks will be busy ones with all the Christmas festivities, shopping, baking, and decorating.  Let’s try to remember those who are sad this time of year, missing loved ones who have passed away, and those people who are alone.  This time of year is hard for many of them.

What’s your menu for Thanksgiving Day?  Ours is one that does not require hours and hours in the kitchen.  I want to have time to visit with relatives and do some fun things.  So fixing a boneless turkey breast in our slow cooker is perfect.  I’ve shared this recipe before, but here it is again for those who are interested.  This recipe has been my most viewed post the past couple of months.  If you need a delicious, easy recipe, this one is great!

Now that cooler weather is here, soup tastes extra-delicious.  It smells so good to have a big pot of soup cooking on the stove all afternoon, plus it’s nice to have leftovers the next day or two.  This week, we’re having soup again!  Yum!!

Menu Plan Monday 10/22/12


I still haven’t made a pumpkin pie, but I did make Pumpkin Custard, which only takes five minutes to mix together.  It’s not a fast recipe because it has to bake for one hour, but it’s worth the wait!  It’s a lot healthier than pumpkin pie because it has much less fat, only two eggs, 3/4 cup of low-fat milk, and only 1/4 cup of sugar plus KAL Stevia.  I used restraint and kept myself from eating half of it and only ate a third (it’s so good when it’s warm) and felt good about getting a good amount of natural vitamin A and other nutrients in the pumpkin.  🙂

Please continue to remember all the homeless people in your prayers and help with food if you can.  Like I mentioned before, someone once asked me, “What if they’re scamming?” My reply was, “But what if they’re not and they really need it.” We never know how something we do for others could affect their lives.

Still haven’t made a pumpkin pie, but I do have cans of pumpkin in my kitchen cabinet, ready to go in a pie or custard.  It probably won’t be much longer til a pie is sitting on our counter!

Please remember all the homeless people in your prayers.  We try to keep a bag of non-perishable food in our car at all times so if we see someone on the corner with a sign, we’ll have food (if they’re given cash, there’s a chance they might spend it on drugs or alcohol).    Someone once asked me, “What if they’re scamming?”  My reply was, “But what if they’re not and they really need it.”   We never know how something we do for others could affect their lives.
