Cherry-Banana Bread (Low-fat)

This delicious, low-fat banana bread is now a favorite of mine:

  • 1 cup flour
  • 1/2 cup Spelt flour (or whole-wheat flour)
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 2 eggs (or 1 egg & 2 egg whites)
  • 1/4 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 1 cup mashed bananas
  • 1/2 cup dried cherries
  • 1 tablespoon flour to mix with cherries

Mix first seven dry ingredients in a bowl. In a larger bowl, mix the eggs, oil, and applesauce. Add bananas and stir until mixed well. Add the flour mixture until all ingredients are moistened. Mix cherries with 1 tablespoon flour and add to mixture. Pour into greased 9″x 5″ loaf pan. Bake at 350 degrees for 1 hour or until toothpick inserted in the middle of the bread comes out clean. Let cool.

After the bread has completely cooled, wrap tightly in plastic wrap for freshness. Store at room temperature for up to a week. Flavor is best at room temperature.

Holiday Sweet Potatoes

This delicious recipe is from Michelle who is very dear to us.

INGREDIENTS:

  • 1/2 cup margarine
  • 6 sweet potatoes, cooked
  • 1 teaspoon vanilla
  • 3 eggs
  • 3/4 cup sugar
  • 1 teaspoon cinnamon

TOPPING INGREDIENTS:

  • 1 cup chopped pecans
  • 1 cup brown sugar
  • 1 cup flour
  • 1/2 cup melted margarine

Add margarine to hot potatoes. Combine with vanilla, eggs, sugar, and cinnamon with mixer. Pour into baking dish.

For the topping, blend the pecans, brown sugar, flour, and margarine together. Add topping to top of potatoes. Bake at 350 degrees for approximately one hour.

#1. What’s your favorite fruit and how do you like to eat it?

I like all fruit. My favorite is a fresh fruit salad with a variety of fruits, and then in the hot summer we like to have a fresh fruit fruilatti nearly every day.

#2. What is the one spice in your kitchen you use more than any other?

I add parsley to a lot of dishes when I’m cooking because it’s super healthy, so it would have to be parsley.

#3. Pudding. Instant, stovetop or premade?

I prefer stovetop made-from-scratch pudding. It’s delicious plus I know it doesn’t have a bunch of additives in it. But if I don’t have the time, premade is good.
#4. Share a recipe using potatoes.

Ribbon Jello Dessert

FIRST LAYER:

  • 3 ounce package of lime Jello
  • 1 cup boiling water
  • 1 cup cold water

Dissolve Jello in boiling water. Add cold water and pour into loaf pan. Let it sit until firm.

SECOND LAYER:

  • 3 ounce package of lemon Jello
  • 1 cup boiling water
  • 3 ounces of cream cheese, softened
  • 1 small can crushed pineapple with the juice
  • 1 teaspoon vinegar

Dissolve Jello in boiling water. Add cream cheese and beat until smooth. Cool. Add pineapple with the juice and the vinegar. Pour on top of the first layer. Let sit until firm.

THIRD LAYER:

 

  • 3 ounce package of cherry or raspberry Jello
  • 1 cup boiling water
  • 1 cup cold water
  • Whipped cream

Dissolve Jello in boiling water, then add cold water. Let cool. Pour over the second layer. Let sit in fridge until firm. Top with whipped cream.

#1. What type of m&m is your favorite?

My favorite way to eat m&m’s is to make a simple trail mix with:

  • 1/3 plain m&m’s
  • 1/3 cup salted peanuts
  • 1/3 raisins

#2. Peanut butter. Smooth, chunky, creamy. How do you like it?

I like Creamy Jiff Reduced Fat on a sandwich. If I’m making “Ants on a Log,” I prefer the chunky.

#3. Do you usually drink out of glass, acrylic, Tupperware type or paper cups?

I drink out of a glass. I’m a big tea drinker, so if I’m drinking hot tea then I’ll choose a mug from my collection of mugs that family and friends have given me.
#4. Share a chicken recipe.

Crunchy Chicken Crescents are easy to make and great for company or taking to a party.

For Your Health, Be Oyster Aware

I have a joke for my readers: If we call young ones “youngsters,” then what do we call new puddles of oil? ………”oysters!” I guess you can tell that I made that joke up myself. Hmm, I think I should just stick to writing text, not jokes. lol

But speaking of oysters, are you “oyster aware?” Be informed! If anyone has liver disease, diabetes, or a weak immune system, they should avoid raw oysters. Those who are at risk and eat raw oysters could develop a serious illness or even die from Vibrio vulnificus bacteria. However, raw oysters are not a serious threat to healthy people. I would definitely prefer to have them cooked, though. The benefits to eating oysters include the following:

  • low calorie protein
  • excellent source of Zinc,
  • Vitamin B-12
  • & Omega-3 fatty acids

#1. Do you ever use scissors to cut any foods? Yes

Which? Raw or cooked?

Both. I use my kitchen scissors a lot, in fact, I have two pair of them. I use them the most to cut raw chicken. I get the best deal on chicken breast I can find and then cut it to the size I need. If I can’t get a good deal on boneless chicken but chicken breast with the bone is really a bargain, then I’ll use my scissors to cut it off the bone. Sometimes I use scissors to cut pizza.

#2. Popcorn. Homemade, microwave, bagged, hot, cold. How do you like it?

We like it popped in a hot air popcorn popper. Then we put extra virgin olive oil on it and salt (or sea salt). That’s our favorite way to eat it. And…I feel good about eating it that way because everything on it is healthy… in moderation.

(If anyone eats much of the microwave popcorn, I suggest researching the safety of the butter flavoring added to it. I’ve read articles that make me want to stay away from it.)

#3. Sushi. Love it or hate it?

I can’t stand the thought of eating raw fish. I think I tried it once when our s-i-l had some, and I didn’t like it.

#4. Share a dessert recipe.

I just posted a great dessert recipe that is easy: Pineapple Delight. If you like pineapple, this tastes like delicious pineapple cobbler. I got this recipe from a friend who has had several requests for her recipe.

Pineapple Delight

If you’re needing an easy but special dessert to take to a pot luck or maybe a luncheon at work, then try this easy one. It is surprisingly good, and when a friend of mine made it, she had several requests for the recipe. I had no idea it had Ritz crackers in it until she gave me the recipe.

Put both cans of pineapple with juice in a long Pyrex dish:

  • 1 large can (20 ounces) pineapple chunks with juice
  • 1 can crushed pineapple with juice

Mix and pour over pineapple:

  • 1 cup flour
  • 5 tablespoons flour

Then sprinkle over the top:

  • 8 ounces of grated Colby & Cheddar cheese

Then:

  • 1/2 stick butter, melted
  • one “column” of Town House or Ritz Crackers (or similar)

Dip crackers in melted butter and place on top of cheese. Bake at 350 for 45 minutes.

Afternoon Snack: “Ants on a Log”

When our daughter was growing up, she was in Girl Scouts. One snack she learned to make was called “Ants on a Log,” not too appetizing of a name. But in actuality, it was and still is a very tasty snack, one that we have continued making through the years. I remember when she’d be home from college during the summer, I’d make a big plate full of these for both of us to snack on, and they’d be gone within ten minutes or so. The neat thing about this snack is that all the ingredients are healthy, and it’s satisfying because of the fiber and protein in it:

  • prepare celery in varying lengths, 2-4 inches long
  • spread with reduced fat peanut butter
  • top with “ants” (raisins – considered to be a “super food”)

This is also a great snack when trying to lose weight.  It’s a healthy snack for kids and everybody, and in case your kids don’t like ants, you can call it something different. 🙂


Broccoli Soup

I just saw a recipe at “Fun, Crafts, and Recipes” that looks good for crock pot broccoli soup. My husband and I really like broccoli cheese soup a lot, so I’ll have to try it. This recipe makes a lot and would be great to take to a pot luck.

Another quick and easy recipe for low-fat broccoli soup is to add a cup of cooked broccoli florets to a can of Campbells 98%Fat Free Broccoli Cheese Soup and low-fat milk.

What to Substitute for Buttermilk

If you have a recipe that calls for buttermilk and you don’t have any, there are two things you could do. You could either add one tablespoon of vinegar or lemon juice to one cup of milk and let it stand for five minutes before adding to your recipe, or you could use one cup of plain yogurt. I’m glad to know that because I’m not a big buttermilk fan and rarely have it in the frig!
