We’ve had some really beautiful, sunny days here in north central Texas recently. For a while there, we were having lots of rain. We had so much rain that some people may have thought about getting a dehumidifier. But that didn’t last too long, and now we’re just soaking up the sun and enjoying the beautiful fall weather! This week and next week are forecast to be nice!

Menu Plan Monday 10/4/10 and Recipe for “Chicken & Spinach Pasta”

Our son came home from college for the weekend, and we had a great visit! The weekend flew by, but that’s what always happens when you’re having fun! I’m trying to think of a menu for the week, and it’s real easy to get in a rut. I’m working full-time now plus tutoring at home two afternoons a week after I get home. Plus keeping up this blog and another website. So really, cooking is the last thing I feel like doing some nights. I LOVE getting rotisserie chickens because we really like chicken and I don’t have to cook it. Just add some veggies &/or salad and supper’s a cinch!
MONDAY: Rotisserie chicken from Wal-mart, baked potatoes (I just wash them, poke several times with a fork, and then stick them in the microwave and press “Potato”…love that feature), salad
TUESDAY: Rotisserie Chicken Tacos with left-over rotisserie chicken, lettuce, tomato, avocado, cheese, salsa
WEDNESDAY: Use the remaining rotisserie chicken in homemade Chicken Tortilla Soup
THURSDAY: “Chicken & Spinach Pasta” – New Recipe

INGREDIENTS:
- 2-3 cups cooked pasta (I use 2 cups either farfalle or rotini)
- 1 tablespoon olive oil
- 1/2-1 cup chopped onion
- 1 10-ounce package frozen, chopped spinach, thawed and drained (OR I think fresh spinach would be even better)
- 3 cups cubed cooked chicken breast OR canned chicken breast
- 1 jar pasta sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded mozzarella cheese
PROCEDURE:
Cook pasta. Saute onion in olive oil. Mix pasta, onion, spinach, chicken, pasta sauce, salt & pepper in casserole dish. Top with cheese. Cover and bake at 350 for 30 minutes.
FRIDAY: Left-overs from Thursday.

And they have upgraded the WordWorld “Build a Word” iPhone app and also have three new WordWorld mobile applications for Samsung’s bada platform. Be sure and check out Toys R Us and Target for WordWorld products .
Brownies!
I don’t need the safest fat burners, but I will need to exercise more this next week. Our son came home from college for the weekend, and we’ve been having brownies. Not just plain brownies mind you, but brownies topped with cooked fudge frosting, a large scoop of Dreyer’s Slow Churned Rich and Creamy Vanilla Yogurt (low-fat with actual yogurt cultures) and then strawberries on top. At least the strawberries are healthy and the yogurt is somewhat healthy!

Aldi’s Green Tea
Menu Plan Monday 9/27/10
Fall is definitely in the air, although technically it’s still summer. The funny thing in Texas is that even though it actually felt cold today, it’s suppose to be up in the 80’s on Tuesday. We’ll probably have more days in the 90’s before fall actually arrives. Enough about the weather. Let’s see now…what’s our menu for the week?
MONDAY: Rotisserie chicken from Walmart, Sauteed Yellow Squash in Herb Butter, green beans
TUESDAY: “Healthified” Impossibly Easy Chicken ‘n Broccoli Pie (use some of the rotisserie chicken)
WEDNESDAY: Rotisserie Chicken Soup, again using leftover chicken
THURSDAY: Salmon Patties, corn, lima beans
FRIDAY: Chicken Alfredo with Broccoli (Our son is supposed to come home this weekend and this is something he likes. However, this is subject to change if there is something he really has a taste for.)
Relaxing on the Beach
I’ve read on several blogs during the last month about people wanting to rent one of the Outer Banks beach rentals. That sounds so relaxing to spend a weekend on the beach and just mellow out and chill. Some weeks are so hectic that it’s nice to get away and not have the phone ring (or at least put your cell phone on silent mode) and not have any laundry or housework. I think everyone could benefit from that every once in a while!

Blogging about fashion, fun, baking and decorating ideas are some of the things Rebecca writes about at I Just Cherish Today. She is madly in love with her husband and started her blog to showcase building their first house together and decorating it. But it has turned into so much more with her theme being to cherish each day and the opportunities that are right in front of us.
Over at The Frugal Free Gal, you will find a very frugal military wife and stay-at-home-mom to a two year old daughter. She loves using coupons, finding good deals at thrift stores and getting things for free or almost free. She gives God the credit for giving her financial wisdom these past few years. By being frugal, she can help others in need in the future.
Teresa at Grammy Girlfriend has been married to her wonderful husband for 38 years and has two children, two children-in-law and four grandchildren who call her Grammy. She loves her family, blogging and so many other things, and she writes about all of these as well as her beautiful Christmas and fall crafts which include a fall wreath she plans to post about soon.

Things I Love Thursday: Priceless Treasures

For Things I Love Thursday, I’m going to show you some special things inside my china cabinet. On the left hand side is a platter from my parent’s very first set of dishes, the pink depression glass vase was my grandmother’s, the cut glass bowl that the pink vase is sitting in was my great-grandmother’s bowl, and the cake plate on the right was also my grandmother’s. (My grandmother admired this hand-painted cake plate in a store window soon after she and my grandfather were married. Her new mother-in-law was with her at the time. My grandmother was thrilled at Christmas time when she unwrapped her present from her in-laws and there was this beautiful cake plate.)
