High Protein, Chocolate Yogurt

Here is a simple recipe for delicious, organic yogurt with high quality protein.  And Stonyfield Yogurt has six different yogurt strains which makes for very healthy yogurt.

Mix the following:

  • * 1 cup Stonyfield Organic Yogurt

My New Swiffer 360 Duster

I have been so busy this week!  I did substitute teaching Monday through Friday plus my private tutoring that I do at home on Tuesdays and Thursdays.  And then on Wednesday evenings, I teach a toddler class.  I kept thinking that I really need to dust, but I didn’t want to take the time to do it.

Thanks to MS&L, I received the Swiffer 360 Duster to use in my home.  I used it last night, and it made dusting go so much faster.  And I was able to dust those “hard to dust” places easily, places like electronic equipment, window blinds, decorative ridges on furniture, around cords and wires, etc.

Organic Bath Towels

Gaiam Organic Towels are premium towels made from 100% organic cotton.  It would be nice to have organic towels such as these that are made without chemicals being in the fibers of the cotton.  I don’t like the smell of some new towels and fabrics where there is some type of odor that makes me want to wash them as soon as possible!  There’s no way to know how many different chemicals were used in the making of these non-organic towels.

Blueberry Cobbler (Can be Sugar-Free)

Sorry, I forgot to take a picture of the cobbler before we had some.  It smelled so good when I took it out of the oven, that I couldn’t wait to have a serving.

This is from a recipe that I adapted.  I made a couple of changes:

  • * I used Stevia to sweeten it instead of sugar.
  • * I used spelt flour instead of white flour.

We were pleased with the results.  Here’s the recipe (you can double it if you want a larger cobbler), and you can make it the original way or with Stevia and spelt flour if you want to make a healthier version:

COBBLER INGREDIENTS:

  • 2 1/2 cups fresh blueberries (or frozen)
  • Juice from 1/2 lemon
  • 1 teaspoon vanilla
  • 1 teaspoon Stevia – I always use “KAL” brand (or 1 cup sugar)
  • 1/2  teaspoon spelt flour  (or other flour)
  • 1 tablespoon butter, melted

Lightly grease baking dish.  Place blueberries, lemon juice, and vanilla in dish and mix.  Mix the Stevia (or sugar) and flour together and sprinkle evenly over blueberries.  Drizzle melted butter evenly over top and gently mix.  Now to make the crust.

CRUST INGREDIENTS:

  • 1/2 cup spelt flour (or regular flour)
  • 1/4 teaspoon salt
  • 1 tablespoon + 1 teaspoon butter
  • 1 tablespoon + 1 teaspoon Crisco
  • 5 tablespoons ice cold water

Mix the flour and salt.  Using a pastry blender, cut in the butter and Crisco until pieces are small, pea-shaped pieces.  Then add cold water a little at a time and gently mix to form a ball.  Roll out on lightly floured surface or mash out with fingers to the thickness you want.  Place on top of blueberry mixture.

Bake in preheated oven at 375 degrees for 25 minutes.  Serve warm with frozen vanilla yogurt.

Here’s a quick reference guide:

  • 1/4 cup = 4 tablespoons
  • 1/3 cup = 5 tablespoons  +  1 teaspoon
  • 1/2 cup = 8 tablespoons
  • 2/3 cup = 10 tablespoons + 2 teaspoons
  • 3/4 cup = 12 tablespoons
  • ….1 cup = 16 tablespoons

  3. Do you use a tablecloth? When – always, when eating, etc. Yes, we have a glass top, so I keep a vinyl tablecloth on it.  (I got tired of always cleaning fingerprints off of it.)   I use my cloth tablecloths for holidays.
  4. Do you use paper or cloth napkins? Paper, inexpensive ones.  I use nice paper napkins for holidays.

Restaurant Meals

Have you noticed when you order a meal at a restaurant, a lot of times it’s enough food for two meals?   Eating such large meals has added to the weight concern of many people in our country.  Some take appetite suppressants to help curb their appetite. They should always consult their doctor first before taking anything.

When we’ve eaten out and the meal is too large for me to eat, I always ask for a take-home box.  It’s usually enough food for another meal, which is nice!
