This week at Central Market through April 13, 2010, if you buy a container of Organic Baby Spinach for $5.99 with an in-store COUPON then you get mushrooms (regularly $1.99) and Gourmet Baby Cucumbers (regularly $2.79) for free. Since regular spinach usually has a high amount of pesticides on it, I love being able to get a good deal on organic. So using these fresh ingredients plus organic carrots (another veggie usually high in pesticides), broccoli, green olives, and Hormel Natural Turkey slices cut and cooked in EVOO (coupons for Hormel Natural Turkey), we had a delicious meal that was super healthy! Here’s our salad:
Menu Plan Monday: 4-12-10 & Recipe for Chicken Rotisserie Soup

This is actually our menu for last week that I never finished. It was a crazy week, so I wanted to go the easy route for this menu. My menus are for two people right now, but when our son comes home from college in May, they will be for three people or more if he has friends over. Last time, he had six friends over making nine of us at the table. It was fun!
Monday: Savory Rotisserie Chicken from Krogers with corn (organic, frozen) and baby lima beans (frozen)
Tuesday: Leftover Rotisserie Chicken with peas & carrots (frozen) and salad made with Romaine lettuce & tomatoes
Wednesday: “Almost Homemade Rotisserie Chicken Soup” This spur-of-the-moment recipe was a hit with my husband who commented several times saying, “SOUPerb,” etc. It just happened to be the right blend of spices, chicken and veggies, that tasted good to us and was very satisfying. I’m guessing at some of the amounts because I didn’t measure anything. I think most of us do that!
- 1 can chicken broth
- 1/2 medium sized onion, chopped
- 1 1/2 cups bite size pieces of chicken from Krogers’ Savory Rotisserie Chicken (Remember that whatever seasonings are on the chicken will affect the taste of the soup. “Savory” seasonings work well with soup.)
- 1 can Progresso Light “Roasted Chicken & Vegetables” soup (or left-over pasta and extra broth)
- 2 cups of favorite frozen veggies – I used left-over corn, lima beans, peas & carrots from Monday and Tuesday nights (plus I used 1/2 cup canned french-style green beans, cut into 1-inch strips, which my husband really liked)
- 4 teaspoons parsley
- 1/2 teaspoon thyme
- 1 teaspoon minced garlic
- 2 tablespoons EVOO
- 1/4 -1/2 cup salsa, depending on how spicy you like it
DIRECTIONS:
Cook the onion in the chicken broth for 10 minutes. Add the remaining ingredients, bring just to a boil and then simmer for 10 more minutes. Quick and “easy as pie.”

(I wonder how that saying originated, “easy as pie.” I’ve heard it all my life. OK, I just googled it, and the earliest reference to it was in a Rhode Island newspaper in 1887. I read in another article what it probably means is “easy as eating pie.” Big difference! I think a lot of cooks would agree that making a pie is not always easy and simple. Except for my mom, cousin Sherry, and a friend of ours, Jackie K, who could probably make pies in their sleep. Actually, those of you who make pies a lot probably think it’s pretty easy. Hmmm…I need to put making more pies on my list of things to improve on.)

Jack in the Box “Free Fries” Fryday, April 16th
This Friday, Jack in the Box is offering FREE french fries so everyone can try out their new fries. Free sounds good to me! We don’t often eat fries, but we’ll probably plan to this week. And we have another Jack in the Box coupon, too, so that would be a good deal.
Jewelry for Jenny
Jenny Bizaillion and her husband didn’t have any medical insurance, and he is overwhelmed right now by the enormous medical bills incurred during her hospital stay and then also for her funeral expenses. Jewelry for Jenny is selling jewelry designed specifically with Jenny in mind. Jenny’s daughter and close friend helped design the jewelry, and part of the proceeds will go directly to help with medical costs. It’s very touching to go to this site and read the story of Jenny and see the pieces of jewelry that reflect her life.
Thousands of prayers for Jenny were lifted up during her sudden illness (flu/pneumonia/sepsis), and you can still visit the FaceBook site set up for her! Although Jenny passed away at the young age of 31 and is greatly missed, her family believes God has a greater purpose in mind. Jenny’s passion for Christ has touched so many people’s lives!

Central Market’s Baked Fish Stix Recipe
Here’s a recipe that kids of all ages will probably like. They’re not frozen fish sticks – they’re made from scratch! I laugh to myself when I think back to when our son was in elementary school. I often served fish sticks and oven fries to his friends if several kids were at our house at meal time. That seemed to be the one meal that all the kids liked. One of his friends went home one time and raved about the meal I fixed. His mom asked me about it, and I told her it was just Van de Kamp’s frozen fish sticks and Ore-Ida Steak Fries that I cooked in the oven. She laughed and said she was going to have to start fixing that, too, because it was her son’s favorite.
Here’s the simple recipe:
INGREDIENTS:
- 1 pound boneless, skinless cod fish
- 2 cups coarse Japanese- style bread crumbs, such as Panko
- 1 cup flour
- 2 teaspoons salt
- 3 large eggs
- freshly ground pepper & salt
- Oil – I use EVOO
DIRECTIONS:
Preheat oven to 400 degrees. Coat a non-stick baking sheet with a light layer of oil.
Cut fish into one-inch strips. Combine the Panko, flour, and salt in a shallow bowl. Beat the eggs lightly in another bowl. Season the fish all over with salt and pepper, dip carefully in the eggs, then press into the Panko mixture and coat evenly. Shake off any excess mixture.
Place coated fish stix on the baking sheet with at least 1/4 inch space between them. Bake for 12-15 minutes, being careful not to overcook.

Philanthropists
Philanthropists are interesting to read about and learn what they do to help other people. For example, I was reading about richard willich recently, and the article said that he asks these three questions in his personal and philanthropic philosophy:
- Is it the truth?
- Is it fair?
- Will it improve things?
I think these are very worthwhile questions, and I like the fact that he supports positive youth programs as well as educational and historical preservation pursuits. That’s probably the teacher side of me that’s drawn to these pursuits.

Wrinkles & Anti-Aging Cream
When I look in the mirror, I see wrinkles and even age spots from spending too much time in the sun in past years without proper sunscreen. I guess I should use an anti ageing cream, but I haven’t started using one yet…just a moisturizer.
The saying “young at heart” has been around a long time, and no matter how many wrinkles a person has, it’s what’s in the heart that truly counts. We probably all know someone who, despite being a senior citizen, seems much younger in years because of their attitude and outlook on life. So “guard your heart above all else for it determines the course of your life.”
Home Owners Insurance
One important aspect of being a home owner is to get good home insurance. I know from experience how important that can be! Several years ago a bad hail storm did a lot of damage to our roof, and our home owners insurance supplied a new roof. Another storm a few years later blew over two huge trees in our front yard. Again, our insurance fixed the hole in our roof caused by the trees and made our roof good as new. It was great to have good home insurance coverage!
Easter Memories

I remember these little Easter bunnies which belonged to our kids and bring back happy memories. The bunny in blue is a Boyd’s Bunny. Isn’t it adorable how it’s dressed in overalls? The “bunny” dressed in lavender is actually an Old Navy dog dressed up in a bunny costume. Old Navy was really clever that year to come up with a dog in a bunny disguise. These are just two of the bunnies we have at our house. We have some more bunnies my mother gave the kids years ago, and they really have special memories now that she’s no longer with us. We also have Easter eggs the kids dyed when they were younger. I saved those eggs and use them to decorate with every year and can remember back to when we were sitting around the table having so much fun being together!
I also remember that Easter is a special holiday for remembering and celebrating Jesus’ resurrection after He died on the cross. It gives me joy to know that God’s power that raised Jesus from the dead is at work in the lives of Christians…is at work in my life. God gives me strength when I am completely drained. He gives me peace when life gets crazy. He gives me hope when I can’t see the light at the end of the tunnel. He gives me joy that the world can’t take away!
Advertising with Brochures
If you have any type of business or service, it’s great to have colorful printing such as brochure printing done to help advertise what you are offering. I’m blessed because I have a very talented daughter who developed a colorful open-brochure type ad for me last year, actually I guess you would call it a flyer. I know I pay more attention to a colorful brochure or flyer than I do a business card and probably most people do.
Tote Bags
I use tote bags a lot when we travel. For those with young children, they also make a good toy bag for outings. And they make a good church bag for toddlers to hold special quiet toys that can only be played with at church.
I’ve never had any custom tote bags. I do have a colorful one from Hawaii that has been one of my favorites along with a solid black one that has pictures of my grandbabies. They come in very handy!
