Shoepeg Corn Casserole

This is Elwanda’s recipe for corn casserole:

  • 1 can shoepeg corn, drained (Green Giant has shoepeg corn)
  • 1 can French style green beans, drained
  • 1 cup grated cheddar cheese (I’d use reduced fat)
  • 1 onion, chopped
  • 1 can 98% fat free cream of celery soup
  • 1 8-oz. carton light sour cream
  • 1/2 stick butter, melted
  • 1 row Ritz crackers, crushed
  • 1/2 cup sliced almonds

LAYER corn and green beans in buttered casserole dish.

COMBINE cheese, onion, soup, & sour cream and spread over veggies.

COMBINE butter, crackers, & almonds and spread over top.

BAKE uncovered at 350 degrees for 30 minutes.

If I were to win the grand prize makeover, I would start with our kitchen. I would love to have a large pantry. Right now I use an antique “broom closet” for part of my pantry. It works OK (plus I like antiques), but it’s not large enough. I like to stock up on grocery items when they’re at a good sale price, and a large pantry would be great to store my bargains. Plus it would be nice to have a place to store appliances. And our cabinets need refinishing or even replacing. They’re 24 years old, and have scratch marks from toy cars in years past. Our son even tried to etch his name in a cabinet when he first learned how to write his name. So the cabinets would be a priority. It would be wonderful to have an updated kitchen!

Tim Nolan’s Basketball Shots

Tim Nolan is an amazing guy with a basketball or even very small balls. Click here to see a Snotr video and watch his unbelievable skill. I don’t know what his percentage of accuracy is, but just the fact that he can do what he does at all is really something. If you have sports enthusiasts at your house, then you might want to share this video with them.

PS I just read that he’s a professional juggler and basketball entertainer. It’s still amazing anyway!

Easy Mini Cheesecakes – Great for Wedding or Baby Showers

These individual cheesecakes would be nice to serve at a wedding shower if you wanted something different from traditional cake. They are simple to make with the following ingredients:

  • 1 pkg. Nestle Toll House Refrigerated Chocolate Chip Cookie Bar Dough
  • 2 8-oz pkgs. cream cheese at room temperature
  • 1 can Nestle Carnation Sweetened Condensed Milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 21-oz can of cherry pie filling (optional)

PREHEAT oven to 325 degrees.

LINE 24 muffin cups with paper liners and place one piece of cookie dough in each muffin cup.

BAKE for 10-12 minutes until cookie has spread to edge of cup.

BEAT cream cheese, canned milk, eggs, and vanilla until smooth.

POUR about 3 tablespoons cream cheese mixture over each cookie in the muffin cups. BAKE an additional 15-18 minutes until the cheese mixture is set. Cool completely. REFRIGERATE for at least one hour. Remove paper liners before serving.

TOP with a teaspoonful of cherries. (Or if red cherries do not go with your color scheme, then you could top with fresh fruit to color coordinate such as kiwi for green, blueberries for blue, etc., or for something neutral you could use shaved chocolate. That’s just my idea.)

5 Pounds in 5 Weeks

I want to lose five pounds, but I want to do it slowly so that I can develop more healthy habits. One pound a week is good for me. I plan to try to reduce sugar (Easter candy didn’t help any…and we still have some left!), eat healthy meals with more raw fresh foods and fiber, drink more tea, eat protein with every meal or snack, and walk more. Some people like to use pills such as eca stack, but each person has to figure out what works best for them.

#1. What’s your favorite form of potatoes?

I guess my very favorite would be fried potatoes with onions, although we rarely have those because of the “fried” factor. A close second would be my “easy mashed potatoes” which are like a comfort food and yet healthy at the same time. I don’t have to feel guilty about eating them like I would the fried potatoes or mashed potatoes loaded with butter and cream.

#2. Pie crust. Premade or from scratch?

I loved my mother’s homemade pie crust. It was so delicate and flakey…so yummy. She passed away in 2000, so it’s been years since I’ve eaten her pies. (My friend, Michelle, makes the closest thing to my mother’s pie crusts that I’ve tasted.) I rarely make pies, but when I do, half the time I buy premade pie crust and half the time I make it from scratch.

#3. Vegetables. Fresh, frozen or canned?

Fresh, when in season. The majority of the time I buy frozen.

#4. What one dish do you wish you could prepare better?

I wish I could make pie crust exactly like my mother’s.

Small Dog Stuff

I just saw some of the cutest things for little dogs at Small Dog Stuff. We have a medium sized Dachshund, and our daughter and s-i-l have an even smaller one. I don’t dress our dog, but our daughter will dress “Josie” from time to time. I have to admit that Josie looks absolutely adorable when she’s dressed up, and I think she knows it, too. lol 🙂

Our House

I remember when we bought our house years ago. It was a ten year old house at the time, but it was new to us. We were excited to fix it up just like we wanted. Advantages of moving into an older home were that the grass and flower beds were already growing well and the blinds were already in the windows. Those were things we didn’t have to think about. There were other things to consider such as mortgage life insurance, homeowner’s insurance, and even flood insurance. But the most fun part was decorating and making it a home with our family pictures and mementos.
